C25K Workout #1/Week 2, Pizza Dinner and Cooking Marathon

Ahhhh! I"m so behind on blog reading - bear with me - it's on my To-Do list for tonight. :) I hope you all had lovely weekends, although I was sad to see that not all of you had long weekends. Grrrr. Mine was long but I don't feel like I took advantage of it as much as I should have. Here goes!!

Yesterday ended up being a nice day! It was beautiful outside so Austin went out and bummed around in the yard and washed our cars – sweet! Me and Reuben visited him, but mostly we stayed in the kitchen watching friends and cooking! For breakfast I made a fancy grilled cheese, then I had a snack of pita/hummus, and then me and Reubs made the following:

  • 4 servings of chicken & mushroom pesto
  • 4 servings of chicken in tomato sauce with feta
  • 4 servings of chicken marsala
  • 4 servings of breaded breakfast chicken sammies
  • 4 servings of ham & cheese breakfast hot pockets
  • 4 servings of tomato pesto pizza
  • 4 servings of beef tacos

Yay! I’m good to go for the week and ready to have a successful work out week!! During cooking I made a lean cuisine (trying to rid those from my fridge - i'm down to 3!), and had a few dove chocolates. Around 5:30 I headed to the gym for Week 2, Workout #1 of C25K! Instead of 1.5 minutes walking alternated with 1 minute running, it’s 1.5 minutes of running alternated with 2 minutes of walking. Here goes!

1 – 6 minutes: warm up; walking at 4.0
6 – 7.5: running at 6.3
7.5 – 9.5: walking at 4.0
9.5 – 11: running at 6.3
11 – 13: walking at 4.0
13 – 14.5: running at 6.3
14.5 – 16.5: walking at 4.0
16.5 – 18: running at 6.3
18 – 20: walking at 4.0
20 – 21.5: running at 6.3
21.5 – 23.5: walking at 4.0
23.5 – 25: running at 6.3
25 – 30: cool down; walking at 4.0

C25K ended up being 2.37 miles burning 135 calories in 30 minutes. I must say that it felt super easy... I guess this is the point/a good thing?! I thought about it and with 6 running intervals x 1.5 minutes = about 9 minutes of running which at 6.3 is almost a mile - not bad! I stayed on to get to 3 miles, which took me to 172 calories burned. Then I hopped on the elliptical machine for a mile at resistance 5 for 10 minutes, which took me to 236 calories. Then I got back on the treadmill for 1/4 mile cool-down which left me a total of 258 calories burned in 56 minutes. Not a bad workout! I headed home and had a popcorn snack, then I tossed the tomato pesto pizza in the oven and through together a quick salad. Yum!

Then it was shower time and time to get ready to go back to work – BLAH! This week is going to be crazy since I’ll be out all the following week. I ended up at 1,597 calories, 184 carbs, 67 fat grams and 69 protein grams. Here’s what I ate.

    I have GOT to get into this way of prepping meals like you have. Even reading your list of prepped meals made me feel happy and stress free - I need that in my life!

  19. I love that you do cooking marathons and crank out a lot all at one time. I'm trying to incorporate this strategy into my life.

    I always think "sauceless" pizza sounds unappealing, but your pesto one looks great!

  20. That pizza looks SOOO tasty. I'm going to have to buy some whole wheat dough from our pizza place and make some (they sell huge balls of dough for about .50. It's awesome!!! and makes three pizzas, at least!) Thanks for the tasty inspiration!

  24. I have a quick question... whenever you cook ALL of that food, do you freeze it or do you put it back in the fridge? I guess that it can stay good for a few days in the fridge? I have just always wondered this.... kind of a weird question, I know!
