New Recipe, 4 Miles, Fun on the Farm!

Hi, Friends!! Thank you for your thoughts and best wishes on this month's goals! I responded to each of you in the comments section of the last post. Thanks so much for your support. I know I say that a lot but I mean it - you make it easier to stay on track! Speaking of, let me back up to Easter!!

I don't really have any pics, but me and Austin did go down to Macon and have "fun on the farm" with his entire family! His Aunt/Uncle have so much land, 3 houses, and lots of toys (i.e. 4-wheelers, tractors with like stadium style seating - crazy; badminton, horseshoes, etc.).

We had a great time, and so did Reuben running around with his cousin Cinnamon! I'll have to get some pics from Michelle (Austin's mom!). As far as eats, I had a Jimmy Dean d-light on the way down and a popcorn snack, then I ate a lot out there (turkey, mac & cheese, hashbrown casserole, rolls, etc.). I was kinda "bad" but I never ate again so it's all good, right? haha We got home late at night and I just worked, got my stuff ready for the next day and called it a night. Ended up at 1,838 calories, 239 carbs, 67 fat grams and 73 protein grams - here's what I ate.

Monday I was all ready to hit the workout but MAN my allergies were a wreck from the previous days' pollen. I got some work done and reluctantly went down for 4 miles (sans Stacy - she was out!). After work I headed home and made THREE new recipes - so exciting! We had one for dinner - here it is!!

Skillet Bow Tie Lasagna
4 servings

1 pound 96/4 ground beef
½ cup diced onion
1 tsp minced garlic
1 can (14-1/2 ounces) diced tomatoes, undrained
1-1/2 cups water
1 can (8 ounces) tomato sauce
1 tbsp dried parsley
2 tsp dried oregano
1 tsp salt
8 oz. uncooked farfalle pasta
3/4 cup (180 grams) fat-free ricotta cheese
4 tbsp reduced fat parmesan cheese

In a large skillet, cook beef, onion and garlic until meat is no longer pink; drain. Add tomatoes, water, tomato sauce, parsley, oregano and salt; mix well. Stir in pasta; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until pasta is tender, stirring once. (if it gets too dry add a little more water). Combine cheeses; drop by rounded tablespoonfuls onto pasta mixture. Cover and cook for 5 minutes.

Nutritional Information: 463 calories, 60 carbs, 7 fat grams and 39 protein grams.

Review: We loved it! I think Austin may have even liked it more than me - the ricotta/parmesan mix was pretty fabulous! The original recipe called for cottage cheese and tomato paste instead of ricotta cheese and tomato sauce, I also used RF and FF ingredients - I really can't tell a difference in this! The recipe was super filling and I think it's going to reheat well!

After dinner we just cleaned up, got ready for work and called it a night - pretty good Monday! I ended up at 1,838 calories, 67 fat grams, 73 protein grams and 239 carbs. Here's what I ate.

Is pollen killing any of you??!! I hope not! It's driving me up a wall!

Any horseshoe players out there? I'm not very good! Austin is pretty awesome!
