Recipe + Day 44 & Day 45: Wednesday, Oct. 15, Assessment & Thursday, Oct. 16 Assessments

So Wednesday was BUSY! Busy at work, busy trying to work in exercise, just busy, busy, busy! I had my healthy muffin/Morningstar sausage/egg sandwich for breakfast and a 100-calorie snack then it was off to lunch with an old friend. I did let myself have a yummy roll with a little bit of butter, but ordered healthy (tilapia, asparagus and mashed potatoes – small serving). It was great! I heart Chequers Seafood Grille. I was super busy and the afternoon sped by – before I knew it I was off to the gym for a great workout with my WO partner! We did legs – same as last week - Lying leg press machine; seated calf raise machine; hack squat machine; adductor machine and abductor machine. So we did calves, inner thighs, outer thighs then two exercises (lying press & hack squat) that work hamstrings, glutes and quads simultaneously! We did 3 sets of each exercise with 10-15 reps on each we upped our weight from last week and I really felt it – like I was sweating and I hadn’t done cardio yet! Afterwards she left and I hopped on a treadmill for what I wanted to be 2 miles…. But could only get in 3 – time for poker! I ran home, changed clothes, grabbed puppy and grabbed the yummy sandwich/baked lays my husband measured/made for me (love him). We headed out for poker and had a great night with friends!

All in all I had 1,544 calories (barely in!), 40 fat grams (good!) and 163 carbs (barely in!). Here’s the details: What I Ate Today. So not bad – especially since I had yummy wine, too!

Today was a toughie. I only got 6 hours of sleep (I require 8) but I woke up super energized! And I woke up weighing 124 – woo! I had a bowl of honey nut cheerios & FF milk, made a chicken/FF mayonnaise sandwich, and took off for a 3.5 hour meeting from 8:30 – 12. They served TONS of breakfast (i.e. eggs, bacon, pastries, etc.). I made a small fruit bowl… and walked away! At the 11 a.m. break I had my sandwich, giving me just enough energy/calories to go straight to the gym at 12 when the meeting ended. I did 3 miles on the treadmill and then headed home to work from home for the day. Around 2 p.m. I had a smart ones with a kashi cookie and right at 5:15 p.m. when I signed off I passed out. Yes, in my gym clothes (was going to go back for another 2 miles). I woke up, groggy and moody, at 6:45 p.m. when Austin got home from work – eek!!! We did make one of my favorite recipes for dinner though – MUFFIN PIZZAS! Yum. Here’s how I make mine:

1 Thomas English muffin
2 tbsp Muir Glen Organic Tomato Basil Pasta Sauce
8 Slices Hormel Turkey Pepperoni
1 oz. Shredded Kraft Fat Free Mozzarella Cheese
Garlic Salt & Red Peppper Flakes

Split English muffin, and put 1 tbsp sauce on each half. Sprinkle lightly with garlic salt and red pepper, then top with cheese and place pepperoni on top (4 pepperonis per side – I cut mine up into 16 tiny pieces). Bake at 350 degrees for 12-14 minutes. I either serve with a side salad, or I make 3 muffins (6 pieces) and me and Austin each have 3. For 3 pieces, it’s 283 calories, 6 fat grams and 40 carbs.

Yay – hope you like it! So for today I had 1,420 calories (good!), 27 fat grams (low), and 220 carbs (in but kind of high). Not bad!! Especially since I burned 203 calories on the treadmill! Oh here’s the details for today: What I Ate Today. Now I’m off to watch Ugly Betty & Grey’s on TiVo!

WOW! I have never weighed 124 pounds. Okay well I probably have but not since I was maybe 10 years old. Sad, but true. Great job. And awesome with the workout.

As for "True Blood" I totally don't mind spoilers. I think I know what you may be hinting at about Sam. I have a theory, too!

Well, i'm sure this is no big relevation now, but since the first episode he was like Sam is the dog. We find it odd that it's that kind of dog though... and that it's the only dog in the show. Really, no one else in Louisiana has a dog? Odd. We have no idea who the killer is though... hmmmm... we just hope the killer has been introduced though. I HATE when they bring in someone random as the killer!

Thanks, gina! Oh I know!! I want to start adding more veggies to them but for now we're on a major turkey pep kick! I was kind of underwhelmed.... I did like that it was more "back to normal" rather than these major catastrophes (it was starting to get a little too ER/dramatic for me). Grey's doesn't need all of that - so I liked last night just watching them all interact at the derm unit - awesome!! And i'm glad she's going to read the diary... interesting!! What did you think?

Ooh, mini pizzas, yum. And great choice on the fish & asparagus!

I'm behind on my Grey's, but I'm with you--I like it when the plots are more realistic and relationship oriented and less overly dramatic and idiotic.

YES - there is just enough going on without adding these, love your word there, idotic plots. I can deal without the disasters- blah.

do turkey pepperonis taste like real pepperoni? i don't think i've ever seen them!

I think they do! They even get greasy looking and everything! haha I always find them right next to the regular Hormel Pepperoni pouches in the cold cuts aisle!
