Days 335 & 336: New Breakfast Recipe, Strength Training Workouts, 8 miles, Me Need Sleepy

So I realized I never posted my tricep/shoulder/chest workout for Monday! Here it is!

Also – THANK YOU, thank you, thank you for agreeing about mean girl and about Reuben’s adorableness. I mean really – what’s not cute about this pupper? hehe

Tuesday was another crazy busy day at work – BLAH! I did TOTALLY enjoy my new recipe from Recipe Girl: Scrambled Egg & Sausage Pizza. Here is a variation for two servings – FABULOUS and filling:

5 oz. TJ’s plain pizza dough
2 links TJ’s Italian chicken sausage, diced
2 large eggs, lightly beaten
1/8 tsp pepper
6 tbsp salsa
¼ cup fat-free grated cheddar cheese

Preheat oven to 425 degrees. Roll out pizza dough. Brown sausage in large nonstick skillet, stirring until it it’s fully cooked. Set aside. Wipe skillet clean. Whisk together eggs and pepper; cook eggs in lightly greased skillet over medium heat, stirring and breaking into small pieces until cooked. Remove skillet from heat. Once crust is how you want it, spoon and spread salsa evenly over the top, then add sausage, scrambled eggs, and cheese. Bake for 8 to 10 more minutes- until crust is golden brown. Nutritional Information: 388 calories, 39 carbs, 13 fat grams and 25 protein grams.

After my yummy breakfast and hectic morning, I did manage to get away (with Stacy) at lunch for 3.5 miles, then I had an easy red curry recipe for lunch (Thai!!) and tried a new Trader Joe’s Product: Cheese Puffs!! They’re fabulous… but addictive. I don’t know if I’ll bring them home again! Haha

After work I headed straight home which was SO nice. I love my new workout plan! I was supposed to do abs… but it didn’t happen! Instead me and Austin caught up on our TV (the usual suspects: True Blood, Weeds a West Wing to round it out hehe). I made this pasta again for dinner (added an extra ounce of noodles!), then I made No Pudge Brownies. Nom nom nom.

Just reading this over I’m like pizza, brownies, cheese puffs and pasta? Love it. I ended the day at 1,812 calories, 250 carbs, 43 fat grams and 107 protein grams. Here’s what I ate.

Wednesday I woke up exhausted. Grrr. Just can’t catch up on my sleep! I got it in gear though, had another CRAZY busy day at work and even had a meeting during lunch. They served pizza, salad and cookies. Uh-oh. I had 1 slice of cheese pizza, 1 small salad with no more than 2 tbsp dressing and 1 cookie. Just HAD to have the cookie! Haha After work I had a lot of catch up to do. So I got on the treadmill for 3 miles, got off and did abs, back and bis, then hopped back on for another mile. It took me a total of 1 hour and 34 minutes burning 437 calories. Woo!

Before I knew it, it was 7:15 and time to go to my sister’s house for SYTYCD. For some reason 285 was still gridlock so I whipped out the iPhone and found an alternate route, picking up Chick Fil A on the way! We ate dinner, watched the show and caught up – good times! We also downloaded new iPhone apps. Hehe And watched Drop Dead Diva – still LOVE IT! I left at 11 p.m., drove straight home and passed out.

I ended up at 1,985 calories, 240 carbs, 72 fat grams and 51 carbs. Here’s what I ate. Eek on the fat grams. I blame a new product Devie introduced me to (which are AMAZING), M&Ms, Starbursts and that lunch with pizza + cookies. Dang!! So glad I burned those calories taking my total to 1,548 – not bad! And truly, I blame myself. I’ve GOT to get better at ensuring I get enough sleep. I turn into the biggest carb monster when I don’t. And I KNOW THIS!

The amazing cookies! Famous Amos meets Chips Ahoy at only 150 calories for TWELVE!

Today I’m shooting for 4 miles, more abs and a trip to the grocery store – WOO! I’m also FINALLY going to evaluate July and set August goals. I’ve been thinking a lot and think I have them ready to go! Hope you’re all having wonderful Thursdays!!

Bummer sorry you can't see the pics! Weird...you are the first person to say that :(

You do such an awesome job of eating the foods you are craving (hello pizza, brownies, etc.) but still keeping it healthy!

Pizza, brownies, cheese puffs and pasta - could have been one of my days... ;)

I love the idea of eggs & sausage on a pizza. I'm making pizza tonight (with super easy toppings - wouldn't want to mess it up too much...).

Have a good workout!
