My First Pie, 4 Miles, Fall Cleaning, Chicken Philly Recipe and Rug Delivery Fail

So there wasn't ONE movie you guys listed yesterday that I don't own/obsess over! Love it! My favorites definitely include Pretty Woman, Sweet Home Alabama, Mean Girls, SATC, Sleepless in Seattle, The Notebook, Love Actually, Two Weeks Notice, and Legally Blonde. Legally Blonde STILL motivates me to work hard - so funny!! And Steel Magnolias is DEFINITELY a girl movie - LOVE it. Still my favorite Julia Roberts film... Shelby... blush and bashful. Sigh. So New Moon seems to have mixed reviews - I really did enjoy, but again, can't wait to see books 3 and 4 that I liked so much more on the big screen!!

And.... backing up... I wrapped up yesterday at 1,742 calories, 236 carbs, 41 fat grams and 107 protein grams. Here’s what I ate. Not bad! Especially with my late night bagel and cream cheese. My mom left this AMAZING cream cheese here – Trader Joe’s reduced whipped or something? I dunno – but it’s the bomb dot com!

Today I:

  • Framed my college diplomas. Yes, my 2004 and 2006 diplomas are officially framed in 2009. I'm so on top of stuff. When I actually hang them, i'll post a picture! :)
  • Made my first pie - Snickers Pie. I found it on My Sister's Kitchen and she found it on Recipe Girl. I made one for Austin's side of the family and one for mine - i'll let you know how it goes over but in the meantime, here's a pic!
  • Picture this times 2! It smells good... I want to try it so much - what if it's bad - eek!

  • Made my meal plan for the week and went to two grocery stores to acquire all items.
  • Cleaned out the garage. Put to use the shelving units Austin's parents gave us, organized, made it cuter!
  • Sorted through donation bags of clothes - they're ready to go now!
  • Made TONS of food: 6 servings of Taco Soup, 4 servings of a new recipe Pizza Soup, 6 servings of Brunch Pizza Squares, 4 servings of Rotini Sausage Pasta and of course, the two pies!

  • The result of my cooking charade- yes, i'm the diet Pepsi drinker and Austin's the diet mountain drinker! The rest is meal tubs all the way back - woo!

  • Watched 6+ episodes of Friends.
  • Walked 3 miles and ran 1 mile in 54 minutes burning 236 calories.
  • Watched a movie called 9 - this animated, post-apocalyptic film. Very odd. I found it distracting how many movies it reminded me of.... I give it a 2 out of 5.
  • Had cereal for breakfast, easy thai curry for lunch, rotini sausage pasta for dinner, and only a few snacks: a kashi cookie, a muffin w/that amazing cream cheese and a glass and half of white wine.
  • Ordered my book club books and a few Christmas presents!
  • Missed my rug arriving. Yes, so much for "2 to 3 weeks." Fedex is making "attempt #2" tomorrow - I hope I'm here - i'm dying to get it! And my mother in law is bringing over a rug pad - she rocks (who has those lying around?)
  • Reorganized my pantry and island (made one of the cabinets in the island a liquor cabinet).
  • I ended up at 1,508 calories, 222 carbs, 26 fat grams and 75 protein grams. Here's what I ate.
Not to backtrack too much - but here is my Chicken Philly Sandwich Recipe for two! It's adapted from Cooking Light! I made them open faced to use less bread...

2 Arnold Select light wheat buns
8 oz. chicken breasts
½ cup mushrooms (60 grams)
¼ cup onions (60 grams)
¼ cup green peppers (60 grams)
1 tsp olive oil
1/4 tsp salt, divided
1/8 tsp pepper
1 tsp white wine vinegar
1 tsp minced garlic
2 slices Kroger fat-free swiss

Heat oil in a medium nonstick skillet over medium-high heat. Add chicken to pan; sprinkle with 1/8 teaspoon salt and black pepper. Sauté 5 minutes or until chicken is done. Remove chicken from pan. Add veggies, vinegar, 1/8 tsp salt and garlic to pan; sauté 6 minutes or until tender. Stir in chicken and pepper sauce; remove from heat. Toast bread. Divide mixture into two and spoon onto bread. Place cheese on top. Melt in microwave for 20 - 30 seconds and serve. I thought it was really good - it definitely had that "philly chicken taste." However, I wasn't in the mood for chicken phillies so it was hard to get into it. Naturally, I wanted Italian instead! haha

Do you like chicken phillies?

Have you ever made a pie? If so, what kind, and how did it turn out?!

Now I'm in bed watching Castle with Austin - great end to a great day! Hope you all had good ones too, i'll be catching up in the morning!!

Snickers pie!!! That looks so awesome, I think I may have to run out and get the ingredients! I'm not a pie eater, but I think I'll eat that one.

Sounds like you had an amazing productive day!

That pie looks so delicious! I am not a baker, I would much rather cook a meal, but this year I am trying a pumpkin pie for Thanksgiving... We will see how it goes, hopefully it will look as good as yours! HAPPY THANKSGIVING!

That pie looks great. Your fridge full of food is impressive.

I don't even know where my college diploma is. Isn't that sad? But for some reason, it was like 5x7 and not big like normal college diplomas. I went to a normal school!

Holy Cats! You did all of that in 1 day? I'm hella impressed.

1) I'm a vegetarian but I like a veggie philly with tofu or meat substitute

2) I have made several fruit pies which are so easy they generally turn out well. I find the standard pies are less to my satisfaction since I have some sort of expectation about them.

I am so jealous of how full of food your fridge is! I really need to start following your example. Mine is woefully empty at the time being.

Your Snickers pie looks out of control good. I'm actually making the pumpkin pies for my family's Thanksgiving and I can't wait! It's my favorite!

I made some kind of walnut pie once. It was pretty tasty, though your Snickers pie looks way tastier!

holy shneickies? (sp?) Kelly! You make me feel like a huge slacker! I'm getting off the couch immediately and am going to be productive on this day off!!! :)

First: Shelby: "Don't talk about me like I"m not here.".....FAVE movie of all time. I think we are destined to be BFFs b/c you just mentioned my all time favorite movie...plus The Devil Wears Prada!!! Love that one too!

I want to try that pie - Andrew wanted a fruit pie, but I doubt he'll turn down snickers. :)

Happy Thanksgiving! Great job on the running, too girl!!!

OMG that pie looks sinful!

Your chicken philly looks delish. Although if I were at a restaurant and the choices were a chicken or a beef philly I would probably just get the beef. If I'm gonna splurge might as well get the real thing!

The pie looks amazing!!! Snickers is my favorite candy bar; I so want a slice...

I have baked a few pies, and they turned out okay. I think I may have not been too exact when it came to measuring and following instructions a few times...
Have a great Thanksgiving!

The pie looks so good....I can't imagine how it would be bad!!! I make pies every now and then....I haven't had a bad experience yet....knock on wood. I just made an apple, pecan cheesecake for Thanksgiving...let's hope that turns out good!

I'm way too chicken to make pies. To me, they seem like you have to be a real insider on the whole "crust" part. But that pie you made; 2 snaps girl!! ;-)

Never even thought of chicken phillys! Maybe I'll make some out of leftover turkey?

I just made pecan pie for the first time, and it looks delicious, we'll just see if it tastes delicious tomorrow. That is, if my husband doesn't eat it tonight!

HAPPY THANKSGIVING!

In the skinny: Do it! I've never been a pie eater either but i'm in!

Kelly: Thanks! That's what I love about this recipe - no oven required - woo! Happy Thanksgiving to you and Ryan and your fams!

Inmytummy: Thanks! haha I hear you - I used to think I lost mine all the time. 5x7 - that's odd! haha

Kimberley: yes! But please note, I did NOT work 8 hours that day - I heart PTO! Oooh fruit pies sound yummy!

Angie: I love having a full fridge - ooh pumpkin pie - I've never had it but it always looks so fall and festive!

Dawn: thanks! You should totally try it - i'll let you know tomorrow how it goes over!

Mica: I love walnuts - I also like pecans... yum! I hope it's good!

Balanceisbest: haha I was off work - these were things I was wanting/planned to do - I swear - you know half the time I spend days in front of the TV! haha Oh I know it... poor Shelby. I love Sally Field too - I watch Brothers and Sisters because of her! I agree- we have so much in common! I forgot that movie - own it/love it, start EVERY walk with "Suddenly I see." haha

April: thanks! oh do it and post the recipe!

Anne: haha I think that was my first time writing it - I say it (probably too) often! Thanks!!

Sunny: I always get hungry looking at your guys' blogs!! Love it!

Therese: It probably is sinful! Notice there are NO nutritional values for THAT one! haha I hear you - I just started eating beef again and so far I only go for ground beef - rando!

Andrea: Thanks! I hear you - i'm slightly a measuring nazi and sometimes it STILL doesn't work out so go figure! I hope you and your family have a great one too - take lots of pictures of toddler + turkey for me!

Melissa: Wow - that sounds good. Cheesecake seems like it would be hard to make!

Kelly: I konw what you mean - that's where I was scared. But when I saw "2 store bought pie crusts" in the ingridients I knew it was golden! Although, if they go over well, next time i'm going to make the crust like her with butter and teddy grahams - amazing!

Biz: Oh that's a good idea - smart leftover idea! haha i"m with you - we've been staring these poor pies down awaiting tomorrow! Happy Thanksgiving to you, too!

Nicci: I haven't either - looked too good to be true so hopefully it tastes great, too!
