ST, Cardio Rest Day, Tree Talk, New Recipe

Happy Friday! Before I get started, I want to say that i'm SO behind on blog reading - i've caught up a bit but have more to do tonight - can't wait! Also, Wordpress blogs aren't loading! I'm going to try again tonight but last night nothing was happening - SAD!

So like I mentioned yesterday, I definitely needed a break from the cardio. My ankles sincerely appreciate it – I can tell! Instead of doing nothing, I decided to do some ST! I did the following in 46 minutes burning 83 calories per HRM with a set of 5-pound dumbbells and a set of 8-pound dumbbells:

Overhead extension 3x15 (triceps)
Shoulder press 3x15 (shoulders)
Hammer curls 3x15 (biceps)
Rows 3x15 (back)
Nosebreakers 3x15 (triceps)
Forward flies 3x15 (shoulders)
Outward curls 3x15 (biceps)
Reverse flies 3x15 (back)
Dumbbell press 3x15 (chest)
Alternating toe touch 2x25 (abs)
Dumbbell fly 3x15 (chest)
Double Crunch 2x15 (abs)
Double Straight Leg Lowers 2x10 (abs)
Bicycle 2x20 (abs)

After ST I made some calls – 7 calls to be precise to tree service contractors and to landscapers. I now have some people coming out on Thursday to quote taking down those two trees and planting something more slimming!

I think these are beautiful and MUCH prefer them! And someone to maintain them on the regular.

I CAN’T WAIT!Then I ran downstairs to make a new recipe for dinner - Spinach-Mushroom Pizza from Fitness Magazine. I tweaked it a good bit (for portions) and we were really happy with it. Here’s the recipe for four servings:


16 oz. dough
1 cup pizza sauce
1/3 of 10-oz. frozen spinach pack, thawed and drained well
¼ cup red onion, diced
2 oz. shredded mozzarella cheese (60 grams)
½ cup mushrooms, sliced
6 tbsp fat-free ricotta
2 tbsp parmesan
1 tbsp olive oil
1 tbsp balsamic vinegar

Preheat the oven to 450. Spread dough. Top with sauce, spinach and onion. Sprinkle with mozzarella and mushrooms. Dollop ricotta over pizza and sprinkle with parmesan. Drizzle olive oil all over. Bake until pizza is puffed and cheese melts, 10 minutes. Take the pizza out and preheat the broiler. Broil the pizza until cheese is browned, 5 minutes. Sprinkle with balsamic vinegar, then broil for 2 more minutes. slice into wedges and serve. Nutritional Information: 397 calories, 10 fat grams, 58 carbs and 14 protein grams.

My Serving...

We REALLY liked it – I personally think that dropping dollops of ricotta on ANY pizza is absolutely genius and makes it look fancy. I’m such a dork. Since we have spinach left over from that pack I’m probably going to make this pizza again Sunday for next week – woo!

I ended the night watching TV with Austin and Reuben and reading some more of my Book Club book, Beach Club – great book so far! I ended up at 1,671 calories, 242 carbs, 39 fat grams and 73 protein grams. Here’s what I ate.

Is there anything at your house you’re DYING to have someone come out and change?

Your house is so beautiful! Yet I agree, slimmer trees would be much more chic :)

Loved Grey's last night! It's about time they had a good episode...I was really not into it for a while. I loved seeing Elis and The Chief when they were young, and that HIV case has me sobbing. Great episode!

I've been obsessed with making pizzas lately. Anytime we make pizzas, we usually end up having them TWICE a week because the first time we have them, they're so good! I love the idea of fat free ricotta.

We went to a restaurant recently that made a sweet ricotta-like bruschetta. YUM. It was basically just a loaf of french bread sliced with garlic oil, ricotta cheese and the drizzled with honey. I decided to try it at home a few days later and mastered it! I bought a small mutltigrain baguette, sliced it, sprinkle a little bit of garlic infused olive oil, bake for 8 mins @ 400 degrees and then top it with a layer of fat free ricotta and finished it off by drizzling the honey on top of the ricotta. You have to try it!

We are pulling out our old Aspen's (hopefully before Spring) since all 4 of them are dead! Not looking forward to hiring someone to yank them out and clueless what to put back in their place.

I bought a 'fixer-uper' so there is a laundry list of things I would love to change. An entire new master bath, fence the backyard, and remove tons of trees (we live in the woods). Making a list makes me add up the $$ and makes it more depressing... 1 thing at a time, I guess.

Ricotta is the best on top of pizza, i tried cottage cheese, but it was messy. I put ricotta on toast w/pb for breakfast. mmmm

Mmmmmmmm, that pizza looks amazing, especially the CHEESE!! :)

There's a looooong list of things we still need to do to our house, but we have to go really slow since it gets so expensive to take on a lot of home improvement projects. At the top of the list is a new heater/AC.

Funny how the one tree grew bigger than the other! I like the tall, skinny trees. It's surprising how expensive tree removal can be! An old co-worker of mine had one fall in her yard during a storm, but luckily, the neighbor had to pay since it was his tree!

The pizza looks great... I love homeade pizza and I LOVE ricotta.

If we get the house that we're looking at, there are a lot of things I'd like to change, removing some trees included. The kitchen is also super outdated. Have you ever read the blog younghouselove.com? it's full of DIY home improvement stuff.

I love the pizza. Yum.

we are getting ready to paint the outside of our house... actually similar colors to your house. tan with black trim and maybe a red front door. those are beautiful trees, i love their shape.

I love all of your pizza recipes - they look yummy all of the time. It's made me branch out past the plain cheese pizza.

I hope the other blogs are loading for you now! I hate when that kind of stuff happens.

I have no decorating or landscaping sense - I would probably leave the trees - but I agree skinnier trees would look prettier.

Beautiful house BTW!

And any type of pizza is fine with me - love the addition of balsamic too!
