New Spicy Spaghetti Pie Recipe, 4 Miles, Book Review

Love that there are some fellow dentist lovers out there! Sounds like we can all at least agree that dentist results are awesome! Also, thank you for your sweet comments on my casa! I'm so ready to take that space up a notch - I spend A LOT of time in there and want it to be perfect!! BTW, I just realized I never posted yesterday's stats - oopsie! I ended up at 1,748 calories, 200 carbs, 63 fat grams and 88 protien grams. Here's what I ate. Kind of a lot of calories for a non-workout day - I was SO hungry all day. I'm surprised I didn't take in more - eek! But oh well - what are you going to do - more fuel for today I suppose! :)

Before I get started with today - here's the recipe I made last night that we LOVED! Spicy Spaghetti Pie (inspired by a Cook’s Country recipe given to me by Biz). Here's my variation of the recipe for SIX very good-sized servings.

One serving - great size, right?! Fab!


12 oz. thin spaghetti
4 oz. sliced deli pepperoni
3 14.5-oz. cans diced tomatoes
¼ tsp red pepper flakes
7 tbsp whipping cream
½ cup chopped fresh basil
3.5 oz. (or 98 grams) mozzarella, grated
Salt

Preheat oven to 475. Spray 9”x13” baking dish with nonstick cooking spray. Cook pasta with salt until cooked. Drain. Meanwhile, cook pepperoni in a large skillet over medium high. Heat until crisp, 2 minutes. Add tomatoes, flakes and ¼ tsp salt and bring to boil. Stir. Reduce heat to medium and simmer until sauce is thickened, about 10 minutes. Add cream and basil and stir for 2 minutes. Add pasta to prepared dish. Press with spatula to flatten. Transfer mixture to dish and pour over noodles. Turn dish to ensure it’s soaked in. Bake for 7 minutes, add cheese, then bake for another 3 minutes until brown and bubbling, Let cool 5 minutes.

Nutritional Information: 441 calories, 56 carbs, 17 fat grams and 16 protein grams.

Review: We REALLY loved it - so flavorful. I was nervous to cook with whipping cream but it made such a creamy fabulous difference and didn't add too many calories! I was also nervous to cook with pepperoni - but this concoction was a favorite - definitely going to be a regular, thanks Biz!!

Today has been pretty chill - just worked, went to the gym and walked 4 miles where I finished Stephenie Meyer's Eclipse. Yes, I had read it before, but I must say I loved it just as much this time. Book Review: I know from past mentions that I don't have many other Twi-hards out there so i'll keep this short! Basically, this book is my favorite in the series because Edward, Bella and Jacob are present in the entire book. I love that SO much happens from a culminating fight with a major vilian over the first two books, the Volturi, the werewolves and vampire partnership, the love triangle - it's like a soap opera. Mostly, I love Edward in this book. He's just so dang sweet. And Alice plays a major role too which is always fun, and it was great to hear some of the vampires stories - how they became vampires. This is my favorite 5/5 hand's down!

One other thing - I had two new recipes today! Fab! I'll post them tomorrow - they're KEEPERS as well. I love when recipes work out! Last but not least - 3 new pairs of shoes arrived today - i'm on a cloud!! LOVE THEM ALL. I'll post them tomorrow as well!

Q: For you meat eaters, what's your favorite 'deli meat'? Mine is turkey hand's down - but I definitely love experimenting with ham, roast beef and this pepperoni was the bomb.

Q: For you twi-hards, Team Edward or Team Jacob? I'm TOTALLY Team Edward no question!

I'm picky about deli meat and will only eat boar's head. I like their buffalo chicken and smoked turkey.

I don't love deli meat, but good quality salami calls to me. I eat turkey most often though.

I've never read the books, but I have seen the Twilight movies and I'm definitely on Team Jacob. With those abs, how can you not be?
