So the amazing, amazing sweet potato fries… here is a pic of mine with the Morningstar chicken sandwich – YUM! I hate that I can’t figure out where I found this recipe (so embarrassing), but it was online and it called for this:
- 1 - 1 1/2 lb sweet potatoes
- 1/4 cup olive oil
- 1/2 tsp kosher salt
- 1/2 tsp paprika
- 1/4 tsp cinnamon
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil. Peal the sweet potatoes and cut into strips that are about 1/2 inch wide on each side. Place the sweet potatoes into a sealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer. Cook for 30 minutes, turning every 10 minutes. Transfer immediately to a paper towel lined plate and serve warm.
Note: I used less olive oil and cut thinner strips so they only needed to cook for 22 minutes! Either way – I LOVED the paprika/cinnamon mixture and they smelled FANTASTIC!On a total sidebar – here are pics of my enchiladas from Sunday! I wish they tasted as good as I think they looked! I plan to try again soon with the new tortillas I got last night!!
