Three Recipes & Day 48 and 49: Sunday, Oct. 19, and Monday, Oct. 20, Assessments AND a new purse

Sunday was a great day! I woke up feeling great and ready to cook! First, I tried out the butternut squash fries – YUM. Honestly, I think they were amazing and tasted JUST like fries – really. I used hungry girl’s recipe, but added paprika and 1 tbsp of olive oil for 10 oz., but to figure out how to cut the squash I watched this video. I liked how she scooped out the seeds and stuff with a spoon – easy! We had them with boca chicken sandwiches – so good. Austin went to go play paintball so I hung out with Reuben and then decided to do something I’ve been talking about doing for a while – walk to the gym! I got ready and walked over – such awesome weather. When I got there I walked for 3 miles on the treadmill then did abs, then walked back home. It was awesome! (4.5 miles all together – I’m pretty close to the gym)

When I got home I made a grocery list based on some new recipes I wanted to try this week, then me and Austin ran to the store! When I got home I tried out Spinach Tuna Sandwiches. It was pretty good- low in calories and high in protein!! I found it on Spark People by Cherrydoll.
Basically, for two servings, you take a box of frozen spinach and cook in microwave; drain and cool. Then add a can of tuna (drained), 2 tablespoons of fat free mayonnaise, and garlic powder, onion flakes, cayenne pepper and dill to taste. Mix it all up and put it on bread – done! I added a tbsp of fat free mayonnaise to my bread – but that’s just me. In the end, it had 192 calories, 3 fat grams and 29 carbs. I liked it, didn’t love it – Austin loved it! Today was okay. I felt blah and just tired after lunch – no fun! And work was really busy, lots of writing, writing writing which is hard on Monday! I went out to lunch at Jason’s Deli but checked the nutritional facts first and ended up with one bowl of SW chicken chili and 6 saltines – not bad! After work I wanted to go home SO BAD. But I went by the gym and did 3 miles. That’s it though – I couldn’t wait to get home. When I got home me and Austin made, you guessed it – another recipe! We tried Low Fat Lifestyle’s Cilantro Lime Salmon. Basically you preheat the oven to 450 degrees and get two 5-oz salmon fillets, 1/10 cup lime juice, 1 tbsp soy sauce, ½ teaspoon splenda, ½ tbsp cilantro (called for fresh; I used dry), and salt and pepper. Mix together everything in a bowl while the salmon defrosts. I seasoned the salmon with spray butter, salt and pepper and baked for 10-13 minutes. While salmon was cooking, we made 1.5 cups white rice. Once salmon was done we served ¾ cup white rice, put salmon over it and then poured sauce over it. We REALLY liked it – it was very tangy and almost tasted like sushi. I don’t know – it was yum and I’ll be making it again! Here’s What I Ate Today.

So after our Jason’s Deli lunch me and my co-worker swung by DSW (I had just gotten a $20 reward in the mail). I went for shoes, but found this adorable purple purse!! It’s Nine West like the blue one, but purple! AND, it was on sale from $75 to $45 so with my $20 coupon it was only $25!! Love it… k- time to go watch Gossip Girls and One Tree Hill on Tivo – yay! Hope you are having fantastic Mondays. Oh, forgot to tell you, I weighed 125 yesterday and 124 today... so i'm kind of sitting here at this weight and still haven't hit 123 again since that one amazing day. SIGH.

Thanks - it was really yummy!!! Yes, i'm a huge fan - i'm going to make them very, very often. I can't get over how low in calories they are but how much they taste like a carb!! haha

did you have a hard or easy time chopping up the squash?

the tuna spinach sounds interesting... but i have trouble convincing myself that it would taste great.
