So yeah... I was pretty much a waste of space. Grrrr – I hate not getting my full 8 hours! Here's more pics of what I was doing instead of sleeping!

So back to Sunday. Blah. My allergies/sinuses were also acting up. Lame. We got up at Andy/Mon’s, got ready and had a yummy slice of bread with butter before heading back home, eating a FiberOne bar and getting in bed – fabulous! I pretty much watched TV (Gilmore Girls, Weeds, Veronica Mars, etc.) and hung out with Austin and Reuben. I did make 2 new recipes… first up, lunch, Portobello Tetrazzini from Cooking Light (altered a bit for what I had on hand, for 2 servings, etc.):
8 oz. chicken
4 oz. uncooked spaghetti
Cooking spray
12 oz. sliced Portobello mushrooms, coarsely chopped
3/4 cup condensed reduced fat, reduced sodium cream of mushroom soup
½ cup fat-free milk
3 tbsp sherry
½ tsp salt
¼ tsp pepper
1 tbsp parmesan cheese
Salt and pepper to season
1 tsp olive oil
Cook spaghetti according to package; drain and set aside. Heat a large nonstick skillet coated with cooking spray over high heat. Add 1 tsp olive oil, then cook chicken seasoned with salt and pepper. Remove from heat, then add mushrooms and sauté 4 minutes or until tender. Add soup and next 4 ingredients; reduce heat to medium and simmer 5 minutes or until thickened. Add spaghetti, chicken and parmesan. Stir for 1-2 minutes then serve. Nutritional Information: 513 calories, 57 carbs, 9 fat grams and 45 protein grams. Talk about comfort food my friends – loved it. Perfect for a lazy Sunday afternoon (i.e. I would never eat this if I thought for 2 seconds I had to go anywhere else that day!)
After more TV and a cat nap, I found myself hungry for a little sandwich. I went down to the kitchen and started messing around with what I had on hand and came up with what I call a Tomato and Mozzarella Press – here’s the recipe for one sandwich:

½ tsp fat-free mayonnaise
1 tsp Trader Joe’s pesto
8 grams Fat-Free Feta Cheese
8 grams Fat-Free Mozzarella, shredded
4 grape tomatoes, diced
8 spinach leaves, halved
4 basil leaves, finely diced
Spread mayo and pesto on both sides, and top one side with cheeses, tomatoes, spinach and then basil. Put top on and drop it on the George Foreman for 3-4 minutes. Enjoy. Nutritional Information: 182 calories, 30 carbs, 4 fat grams and 12 protein grams. I was a huge fan of this little guy!
Around 8 I still wasn’t feeling better so I decided to take a rest day (i.e. vacation from work – I’d only taken 4.5 days this year – time to take one!). I ended the day at 1,764 calories, 257 carbs, 34 fat grams and 103 protein grams. Here’s what I ate.

That salad looks awesome! Too bad I can't find sandwich thins around here :( I'm sure bread would work though am i right?? :)
I'm loving all of your posts lately! Reuben looks so sweet, CALM, and cuddly (emphasis on calm). Sorry your allergies are still bugging you! I used to suffer like crazy, but they are nearly as bad up here in the Rockies, thank goodness.

Thanks, Pam! They were both yummy! I'm slightly obsessed with finding recipes that are big on taste and seem like they'd be bad for you... but are prepared in a low-calorie way! Aw thanks - talk about obsessed - I love my little Reuben!
