Day 316: New Recipe, Crap work Day, 3.5 miles, Book Review, Tummy Ache…. grrr

Yesterday started out pretty good! I had a breakfast sandwich when I got into work, followed by a fiber one bar.




Loving them! I worked and things were fine, had some reduced fat cheez-its, then I headed to the gym for a 3.5-mile walk.


I got back to work, and had a yummy pasta salad!

Looks better in person - swears! :) Recipe is under 'recipes' called Farfalle sausage something - i just used penne this time!


Then there was an incident where basically someone went around me and it PISSED me off to no end – like tears of frustration. Grrrrr. I hate people who don’t follow chain of command! At least give me a CHANCE to decline or be a b*tch or what have you before going around me!!! Anywho, I had 4 mini snickers (yes, a little stress eating) and then left work still steaming… and with a tummy ache.

Like, there was no way I could go back to the gym. So I headed home still furious but of course Austin and Reuben made me feel better. I decided to cook and go say goodbye to 1414 and see Mary off for her first day of work. I cooked a recipe, Pulled Chicken Sandwiches! This is recipe from Cooking Light but it called for ‘slow cooking,’ so I mixed it up to make it fast cooking, took the serving size down, and added a few spices. Anywho – here’s the recipe for 2!






8 oz. raw boneless skinless lean chicken breasts, halved
1/2 cup canned tomato sauce
1/4 cup ketchup
½ tsp paprika
½ tsp chili powder
.75 tbsp. plus ½ tsp. brown sugar
.75 tbsp. plus ½ tsp. cider vinegar
.75 tsp. garlic powder
1 tsp olive oil
Red pepper flakes, to taste

In large non-stick skillet over medium high heat, add olive oil then chicken tenders and continue to cook until browned. Add paprika and chili powder to chicken mixture and cook through. Remove all the chicken and place it in a bowl. Shred each piece using two forks -- one to hold the chicken in place and the other to scrape across the meat and shred it. Return the shredded chicken to the pan. In small bowl combine tomato sauce, ketchup, cider vinegar, garlic powder and brown sugar. Add sauce to chicken and stir. Cook for about 5 minutes until sauce is warmed through and starts to thicken. Serve on whole wheat bread. If you like, season to taste with red pepper flakes.

Nutritional Information: 296 calories, 37 carbs, 5 fat grams and 33 protein grams. Without bread: 216 calories, 18 carbs, 4 fat grams and 28 protein grams!It was yummy and really filling! Next time I’m going to use less tomato sauce and add diced onions! To make it more low carb, I think it would taste good in a low-carb tortilla like La Tortilla Factory – next time I’m def going to wrap mine up.

After sandwiches (which we had with Kettle sour cream and onion chips) we hopped in the car and headed over to 1414 where we caught up with Mary/Scott/Jay/Seema/and Matt, had a few drinks (had a glass of wine & 2 beers) and chilled. Reuben even came! Mary was super excited but nervous about her job – I hope her orientation is going great today! We got home around 10:30 and the boys stayed up, but I read blogs and crashed, ending the day at 2,044 calories, 239 carbs, 59 fat grams and 96 protein grams. I ate the right amount of food, but the 2 beers and glass of wine pushed me over the edge. :( As per usual though – worth it! Here’s what I ate and drank. I’m a little disappointed that I only did 3.5 miles yesterday (no ST… no other 3 miles) but today is a new day so hopefully I’ll get my lazy bum in gear and go burn some calories!! K - so this is the first book in the series. It's a series of mysteries that takes place in a small town in Georgia and focuses on the police chief, his ex-wife - the town coroner, and the first female cop. It's AWESOME. This book was great - lots of twists and turns, solved a couple of mysteries, bridged past with present and definitely had me guessing until the end. I will say it got a bit graphic when describing the nature of the murderer's crimes, but if you can stomach it, it's worth it! I give it an A!

Ahh, I love pulled chicken sandwiches! I can't wait to make this. Does the nutritional information count the sandwich bread, or is it just for the chicken alone?
