Day 317: New Mediterranean Recipe, Updated Recipe Page, ST, SYTYCD

Today I woke up with MAJOR stomach pain. OMG – the tummy troubles were clearly not over. Sad. I finally made myself eat cheerios/milk… then I had a Fiber One bar thinking it would help. I worked, then took lunch to make pasta! An “oldie” (2 weeks ago!) but a goodie – Pesto Pasta with Chicken and Mushrooms!

Yuummmm. I wanted to at least do ST but I wasn’t up to it, so I just went back to work and had some cat cookies. Reuben was a wonderful companion all day, and when I get off work I did 2 exciting things:

1. Updated the recipe page on the blog! Check it out! It’s still not the most user friendly but I think it’s a step in the right direction.

2. Found a new recipe! I keep a list of ‘new’ recipes I plan to try, but none were speaking to me so I dug around online and found a yummy recipe on cookinglight.com: Chicken Souvlaki! I edited it for 2 people and removed some ingredients (dill, cucumber) and didn’t use ‘greek-style yogurt’ relying instead on Dannon fat-free plain! Here’s the recipe for 2 peeps:

2 6” pitas (I used Trader Joe’s)
1 oz. crumbled fat-free feta cheese
¼ cup plain fat-free yogurt (2 oz.)
½ tbsp olive oil, divided
1 tsp minced garlic, divided
¼ tsp oregano
8 oz. chicken
½ cup lettuce
8 cherry tomatoes, quartered
2 tbsp onion, diced

Combine feta, yogurt, ½ teaspoon oil, and ½ teaspoon garlic in a small bowl, stirring well. Heat 1 tsp olive oil in a large skillet over medium-high heat. Add remaining ½ tsp garlic and oregano to pan, and sauté for 20 seconds. Add chicken, and cook for 2 minutes or until thoroughly heated. Toast pitas, cut them in half and open each half. Place 1/4 cup chicken mixture in each pita half, and top with 2 tablespoons yogurt mixture, 2 tablespoons shredded lettuce, and 1 tablespoon tomato. Divide onion evenly among pitas. Serve with couscous. Nutritional Information (without couscous): 330 calories, 34 carbs, 5 fat grams and 35 protein grams.

We really liked it you guys! Super creamy and flavorful – I went a little heavy on the garlic especially since I omitted the dill. We’ll definitely have it again but next time I won’t even bother with the couscous – if anything I’ll just do a side of hummus/carrots! There will definitely be a ‘next time’ though – yay! I think I’m going to try many more Mediterranean recipes, and I’m loving sandwiches now, tis the season and all.

After dinner I did strength training while watching Gilmore Girls and SYTYCD! I did all upper body – woo! No cardio today which makes me sad – but I’m shooting for 6.5 miles tomorrow and abs! I ended the day at 1,767 calories, 244 carbs, 44 fat grams and 102 protein grams. Here’s what I ate. Hope you guys had great Thursdays and that you’re well into wondermous Fridays!!

I looove souovlaki but I'm lucky enough to have a guy right outside my apartment building who makes it for me. Though I doubt it's as healthful as yours. Feel better!!
