Day 322: 6.5 miles, New Chicken Salad Recipe, New Chair, Book Club Success

Yesterday was a great day!! I did the usual: work, walk 3.5 miles during lunch, work, walk 3 miles after work! However, a few fun things were peppered in! First, I made a Chicken Salad recipe from Swanson brought to me by my friend Stacy who has now lost TWO pounds! Here’s the recipe for two sandwiches (2 servings):


1 can (9.75 oz.) Swanson Premium White Chunk Chicken Breast in Water, drained
2 tbsp chopped celery (didn’t include; didn't have any!)
½ tbsp finely chopped onion
1 tbsp nonfat mayonnaise
1 tbsp nonfat plain yogurt
1/8 teaspoon ground black pepper
4 slices Whole Wheat Bread
2 tomato slices
2 lettuce leaves

Mix chicken, celery, onion, mayonnaise, yogurt and pepper. Divide chicken mixture among 2 bread slices. Top with tomato, lettuce and remaining bread slices. Nutritional Information (with bread, tomato & lettuce leaves): 223 calories, 30 carbs, 6 fat grams, 24 protein grams. This was GREAT for packing for lunch – just made a baggy for bread, a baggy for tomato/lettuce and a container for the salad. I REALLY liked the salad, yummy and filling – but I definitely want to put the celery in next time –I like a bit more crunch ya know? It was Thanks for sharing, Stacy!



So after work/gym/work/gym, it was time for the Book Club! I got to Shana’s and my sister was already there with an AMAZING purchase she picked up for me a few weeks ago – a orange leather Pottery Barn Grayson Chair for one of my guest rooms! Here it is on Pottery Barn for $500…. But Devie found it for $75! Seriously – with arms and everything. Can you believe it? I heart overstock!


WOO! Thanks, Devon, for being awesome and hitting up the outlets with your iPhone and driving it home – nice! It goes PERFECT in this guest room at my hizzy!!



Yay!! So after getting the awesome chair in my car, we headed in for Book Club! We had 6 girls come last night and Shana had it SO organized! She had lots of great appetizers and ideas and we had a blast. We ended up choosing the Time Traveler’s Wife! We’ll meet in 3 weeks to discuss the book and then go on a ‘book club field trip’ together to see the movie! Yay! It was nice to talk books, but it was also nice to get together and visit with everyone – weekends are just impossible to get everyone together! Shana had the great idea to start a book club blog and take a group shot at each meeting and use the blog to keep up with girls who can’t make it, make announcements, etc. – so smart! I’ll post our book club group pic when our blog is ready!!

So after book club chat and the ladies who were traveling this weekend left (sister to ‘the mountains’; Monica to ‘the beach’ – I’m so jealous of them!), me, Stacy and Shana held down the fort taking in wine and staying out past our bedtimes – oops! I got home and Austin was pulling in to! He had gone to poker for the second game at 9 so we ended up staying up talking and playing pool until 2. Seriously?! We’ve only used the table a few times since we moved in and a Wednesday was a good idea? No. And by the way…. my skills are in need of sharpening – eek! So, I ended the night at 1,977 calories, 233 carbs, 48 fat grams and 99 protein grams. Not too shabby seeing that I had 4 glasses of wine – oh my! Here’s what I ate.

Today I have my session at the gym with the trainer, Chris, to see how that goes, and I hope to make TWO new recipes!! Other than that it’s just work and catching up on SYTYCD – and hopefully spending lots of time with Austin because he loves tomorrow for another bachelor party (this time Nashville). How long have you been in your home? Every room is decorated beautifully! We don't even have paint up on the walls and we've lived in ours 6 months.

Love love love chicken salad, tuna salad, well any salad! That needs to be on my list for a lunch at work.

Chicken salad is like a miracle food keeps for full forever! Also, I love how AGAIN you make it under 2000 calories w 4 glasses of wine you tiny thing you!
