In Touch Catch Up New Scampi Recipe, New Chicken Recipe and 4.5 miles

So yesterday ended up being about as lazy as the Sunday before. I’m so good at celebrating labor day and not doing anything resembling…. Labor. Love it. So I got up at 9 a.m., put on my gym clothes and watched bad TV for about 3 hours. I finally made my way to the gym around 1 p.m. and walked 4.5 miles while catching up on InTouch (I looked at pictures in read 7 issues). My HRM was acting up… sad. I think I’m going to have to exchange it. Grrr. I got back home and whipped up lunch, a new recipe, Greek Style Scampi for 2 from Cookinglight.com (changed it up a bit for us!):

4 ounces uncooked angel hair pasta
½ tsp olive oil
4 Kalamata olives (15 grams), finely diced
1 tsp bottled minced garlic
½ (14.5-ounce) can diced tomatoes, undrained
6 oz. peeled and deveined medium shrimp
1 oz. fat-free crumbled feta cheese
Pepper, Salt, basil, oregano, and red pepper flakes to taste
Cook pasta according to package directions, omitting salt and fat. Drain and keep warm. Heat oil in a large nonstick skillet over medium-high heat. Add garlic to pan; sauté 1 minute. Add tomatoes and olives; cook 1 minute. Add black pepper, salt, basil, oregano and shrimp; cook 3 minutes or until shrimp are done. Stir in red pepper; remove from heat. Divide pasta onto two plates. Top each serving with ½ shrimp mixture and ½ of cheese. Nutritional Information: 373 calories, 50 carbs, 7 fat grams and 29 protein grams. We loved it! It was very similar to last week’s shrimp arribbata – so much so that I was worried – but it tasted so different. Naturally, I liked this one better and Austin liked that one better. Hehe

After cooking/walking I was sleepy so I went upstairs and preceded to watch more bad TV, and work on some strength training routines and find some new recipes (neverending!). Before I knew it it was time to get ready for back to work, and to cook dinner which meant another new recipe: Creamy Dijon Chicken from Cookinglight.com. Here is our variation for 2 peeps:

8 oz. chicken
Cooking spray
1/8 tsp salt
1/8 tsp pepper
¼ tsp paprika
1/8 cup fat-free mayonnaise
½ tbsp lemon juice
¼ tsp Dijon mustard
½ garlic clove OR ½ tsp minced garlic
1/8 tsp dried rosemary

Preheat broiler. Coat chicken with cooking spray; sprinkle with salt, pepper and paprika. Place chicken on broiler pan coated with cooking spray. Broil 4 to 5 minutes on each side or until done. Combine mayonnaise, lemon juice, mustard garlic and rosemary. Remove chicken from oven and add to pan over medium heat. Mix with dressing and stir for 1-2 minutes. Serve with 1.5 cups rice; and ½ cup mushrooms and 1 ½ cup zucchini heated in 1 tsp olive oil and sprinkled salt). Nutritional Information (including sides): 424 calories, 64 carbs, 4 fat grams and 28 protein grams. Next time, I’m cutting the rice down to 1 cup total, which would take the nutrients down to 344 calories, 46 carbs, 4 fat grams and 28 protein grams and, I think, still be JUST as filling!!

We ate this while I paid Austin back for taking me to Time Traveler’s Wife watching Terminator 2. Then we had a little dessert (pudding + chocolate chips + redid whip) and called it a night! I ended up at 1,674 calories, 252 carbs, 32 fat grams and 94 protein grams. Not bad! Especially with the 4.5 miles in the mix! Here’s what I ate. WONDERFUL holiday weekend. I felt so relaxed and, like Austin pointed out, I had been going on E and now I feel 100% again. YAY! I’m ready to hit the gym and get back to it!! Hope you all had wonderful Labor Days and that your first day’s back aren’t too bad. :)

I love chicken dijon! I also love Cooking Light magazine and website. I always get inspired when I look at all the great recipes.

I'm impressed you went to the gym that much on a holiday weekend... you did much better then me! As for a healthy side... I'm not really good at making those LOL. Thats probably why I try to make one-pot wonders at home because the only healthy sides I really LIKE to make are salad (which I get sick of easily) or corn on the cob. At resturants though, I always sub out fries and such for soup!

That sounds like a good recipe. I like a lot of the stuff in Cooking Light.

Hm...my favorite healthy side? I like steamed or stir-fried veggies...though not as much as I LOVE French fries.

Girl you (I say this all the time) are sooo good about trying new recipes!!! Dang!! I'm finally trying some new salads from my friend Sherry. Maybe I should look at some Cooking Light ones huh? My favorite healthy side is broccoli. Plain and simple.
OR SINFUL MASHED POTATOES HEHEHE

Okay, I'm not sure it's really that healthy, but my favorite "healthier" side are baked Parmesan sweet potato fries.

I LOVE LOVE LOVE In Touch, US Weekly, People...anything trashy like that! I'm a big fan of Cosmo and InStyle as well but I like to actually read those so I usually don't have them at the gym with me.

My favorite healthy side is sweet potato + butter spray + sprinkle of cinnamon

Favorite magazine is probably Better Homes and Gardens. I know... BORING. But they have good decorating and gardening ideas plus some decent recipes. I also love Coastal Living but since I don't live on the coast anymore, I don't read it (don't want to get homesick).

Favorite side: Dirty martini with Grey Goose vodka and three blue cheese stuffed olives. Oops! You said "healthy" -- Grilled veggies or long grain and wild rice.

I love all the trash magazines - In Touch, US weekly, People. etc. But I try not to buy them and just read them at the checkout line. I like to get a pedicure to really catch up on them. :)

What is going on with your HRM? Sometimes I have had troubles with mine not picking up my HR or it will say something like 36 when I'm running. I've gotten into the habit of really scrubbing it down after I wear it. And I noticed that when I wash the strap it gets a lot looser so I always have to tighten it to get a better reading.

My absolute favorite healthy side is zucchini, onions, green/red/yellow peppers, fresh garlic all sauteed together in a little olive oil and at the end add some of the Bragg's Liquid Aminos for additional flavor... If you have asparagus or any other random veggie you can toss that in as well, super quick and delicious

Hey, I get the Bragg Liquid aminos at whole foods... You have to add it at the end to flavor the food, just doesn't work well from the beginning...
