Blast to the Past, Pizza Chat, C25K

Thank for your sweet pizza comments!! Just so you know – here’s how easy breezy it was! I heart few-ingredient recipes!

1 16 oz. bag of Trader Joe’s dough
100 grams Trader Joe’s fresh pesto
120 grams Trader Joe’s fresh mozzarella, sliced
6 – 7 slices of slicer tomatoes
2 tbsp reduced fat parmesan
2 tsp dried basil
Salt to taste

Spray pan lightly. Spread out dough. Spread on pesto evenly. Sprinkle parmesan. Top with cheese and parmesan, then tomatoes and basil. Sprinkle with salt to taste. Bake at 450 degrees for 12 – 14 minutes. Nutritional Information for ¼ of the pizza: 488 calories, 55 carbs, 22 fat grams and 16 protein grams.>Usually I make it as a mini pizza, like here. But this time I just quadrupled it and made a whole pizza!

Anywho, yesterday was back to work – BLAH. The day was long. I walked 3.25 miles during lunch (burned 170 calories), headed home after work and pretty much crashed! I was SO glad I had all of those meals ready – wow! We had chicken sandwiches for breakfast, taco soup for lunch and chicken marsala for dinner – sweet! I watched some of my crap TV, me and Austin watched a West Wing and then it was lights out! I ended up at 1,586 calories, 216 carbs, 36 fat grams and 98 protein grams. Here’s what I ate.

I will say – the last two days I’ve had one of our FAVORITE breakfasts – breaded chicken muffins with ketchup. It’s my own version of chick-fil-a – fab! (forgive the iPhone pic taken in my cube!)


Also, before I get into today, I’ve been sorting through pictures of to help Austin with the new home server he got (more on that later!). Anywho – here are a few gems from college – enjoy!

Today was exhausting! I got up, headed out of the neighborhood and Georgia Navigator told me my way to work – 400S – was shut down. All red. Grrr. So I take a back way through 3 elementary school districts and wound up 15 minutes late for work - not bad! I worked all day, took a quick 3-mile walk during work (burned 148 calories in 45 minutes), had a webinar that was catered…. Had a little bit of rice, salmon, shrimp… and then two cookies. DANG YOU TOM! (second day – the WORST). Then I worked more – BLAH! I headed down after work and met Stacy for a 2.5 workout including C25K Week 2, Workout #2. It went great! (burned 152 calories in 30 minutes). Total burn of 300 – woo! I headed home, showered, then we headed out to meet Mary and Scott for dinner at Rumi’s Kitchen. It was so yummy! I had two glasses of wine, some pitas and goat cheese with basil, Bodenjoon – a tomato based veal stew with saffron rice. I may have had a ½ of rice and half the soup – it was SO filling. And I’m not a big veal gal… Anywho – great dinner, great conversation, good times! I don’t even know how I’m going to track this one – bear with me!

My biggest goal this month has been no alcohol, more protein, less carbs, and scheduled workouts. So far, so good!! :)

Cute pictures and great job staying with the Couch to 5K. Do you think you're going to run an actual 5K race at the end? You should!

My goal was not to drink for January but that turned into just two weeks. Still, that was sort of hard in itself!

i love the trader joe's pizza dough... in fact your previous blog post made me so hungry for homemade pizza that i made it last night! and i have leftovers for lunch today. oh, i used to be hooked on the chicken biscuits at mcdonalds!!

I've been trying some different breakfasts lately: cereal&milk, pancakes, toast w/pb, shakes. BUT nothing fills me up like oatmeal.

I'm with you on the veal, I can't seem to eat it, even though I am far from vegetarian...

Your Chick-fil-a sandwiches always look so good. Every Monday, our receptionist sends out a Chick-fil-a coupon to use at the mall, and it's always so tempting!
