Recipe, 6.5 Miles, C25K, Magazines, Mamma Mia and Vitalicious

Thank you all SO much for your support for my January... and for my disappointment for not doing as much as I wanted, hitting as many of my goals and kinda letting go of my program a bit too much. I'm having a motivation problem right now and really appreciate your help!!

So yesterday I had yet another high day due to my lack of self control around snickers, cookies and kit kats. What is my problem? I ended up at 1,983 calories, 195 carbs, 89 fat grams and 97 protein grams. Here’s what I ate. Ew. That junk didn’t make me feel better or stronger or anything. I’ve got to think more big picture instead of “I want this. I’m bored. Why not? I’m stuffing my face now.” Onward and out – leaving that behind!

So I realized I didn’t post the recipe I used for the Buffalo Chicken Salad. For those who are interested, here goes, and please know, this was adapted from Hungry Girl!


For 4 Servings

16 oz. chicken, diced

2 tsp olive oil

½ tsp cumin

6 tbsp Frank’s cayenne pepper sauce

3 tbsp reduced fat parmesan cheese

8 turkey bacon strips, divided

1 large tomato, diced

8 cups romaine lettuce, divided

8 tbsp fat-free ranch, divided

Spray large pan with nonstick spray and add olive oil. Cook chicken with cumin, stirring until no longer pink. While it cooks, combine Frank’s and parmesan, cook bacon in microwave and dice tomatoes. Once the chicken is cooked, add to sauce/parm mixture and stir until the chicken is coated, then cook in microwave for 1 minute. Then put ¼ lettuce in each bowl, and top each with ¼ chicken mix, ¼ bacon, and ¼ tomato mix, then 2 tbsp of fat-free ranch. Nutritional Information: 275 calories, 18 carbs, 5 fat grams and 33 protein grams. To beef this up, I added a slice of nature’s own bread with a ½ tsp of light butter – your call! We LOVED it! I also thought it looked so pretty with the toppings organized in thirds. The little things, people.

So today I woke up, weighed 122…again, and ran way late for work. It was snowing. Traffic was bad. I had to stop for gas. One of those days. I got in (eventually) and got lots of work done, and walked 4 miles during lunch. It sucked without Stacy (she works from home on Wednesday), but I did walk it out whilst listening to my 80’s playlist (thanks, Austin!) and reading 3 magazines: In Touch, People and Fitness.

I pulled several recipes from Fitness – yay! Then it was back to work, then it was back to the gym for C25K (2.5 miles; burned 160 calories), and then home to cook 4 servings of Garlic Chicken, Quinoa and Veggies (craving it!) and 4 servings of chicken fried rice (had the pans out and veggies so I went for it!). I also finished the dining room project – all that’s left is hanging it – WOO!

So… I have news!

Mamma Mia is in Atlanta… at the Fox Theatre… Feb. 9 - 14…and I have tickets tomorrow night! Can’t wait – want to see it SO bad. In preparation, I’m watching the movie (yet again). It’s just SUCH a feel good – and I heard the show was amazing! Thanks to my sister for organizing - me, her, our mom and another mother/daughter group are going!!


So now I’m watching the movie and munching on a vitamuffin topped with PB (per the blog world suggestion – it does add a little something extra!)

I’m def done eating for tonight – ending up at 1,630 calories, 189 carbs, 54 fat grams and 101 protein grams. Here’s what I ate. So yes, a little chocolate binge around lunch but nothing too tragic! I felt full and great all day – yay!

What’s your favorite magazine? I subscribe to Fitness, Shape, Self and Glamour. My mom gives me her People, InTouch and Entertainment Weekly’s!

Hey!! That salad looks tasty. I havent been able to make new recipes ina while--Hope I get some time and motivation to do that soon!

I suscribe to Clean Eating, glamour, Self, Shape...but I like reading all the gossip ones, Oxygen, Cosmo, Real Simple! and any cooking one! :)

First of all, don't beat yourself up! Being up a couple pounds is no biggie, and you'll be back on track for yourself in no time, I'm sure. :)

My fav mags are Real Simple, Health, and Runner's World. I also really lile The Atlantic, just started checking it out.

I love the stage version of Mamma Mia, but not the movie. I think I'm the only one! Don't be too hard on yourself. It's called "emotional eating" for a reason, and we all do it! It's better to learn from your mistakes.

My favorite mags are definitely Cosmo and Vogue!

I used to subscribe to Women's Health but I let my subscription expire. I sometimes read Self, Shape, Fitness and Glamour when I'm in a mood to get a magazine.

I've never seen mama mia- theater or otherwise :( Maybe I should rent the movie??

I subscribe to Oxygen as you well know :-) I LOVE IT! I love their clean-eating recipes most of all.

I've missed you! I try to read your blogs at work and yours never load. Pisses me off. haha

There is a bowl of chocolate sitting in front of my desk as I type this...I just can't let myself have any because I know, once I have one piece it's over! I will eat it all!

I love reading magazines but for some reason I get a headache when I try to do it while working out. Such a bummer!

I'm going to have to breakdown and finally watch Mamma Mia! I have got to find some of those vita tops/muffins! I don't think they sell them at my Kroger! BTW- I am totally there with you on the motivation level!!!

That muffin looks yummy! Good for the chocolate fix. I'm right there with you, I'm having a weakness for my Samoas that are calling my name from my desk drawer. ACK! Doesn't help for sure, but it happens to the best of us.

I subscribe to Real Simple, SHAPE and SELF. I used to subscribe to US Weekly, but the hubby was getting annoyed with all my magazine subscriptions. I had to narrow it down a bit ;)

Mama Mia is awesome! I haven't seen the play but my mom and sister and I watched it during a girl's night when my sister was in town. It made me want to get up and dance like a looney. I have to try those vitatops, everyone is talking about them but I am afraid if I have one I will want 10 as tends to happen to me with processed prepackaged foods that taste good. I should probably wait until I get a little further in my "perfect days until St. Lucia" cycle

I LOVE Mamma Mia, but have only seen the movie. I bet the real deal is amazing, I hope you have fun!

Also I've been in a FUNK too! My weight's gone up to around 116...I don't know why but my hunger's been insatiable these last few days, I was actually at 112 just 2 weeks ago too. It's not so much the weight, but the tightness of my jeans that's bothering me, haha. But yeah, trying to find that happy balance over here and not stuff my face after the gym! :)

I don't subscribe to any magazines but if I did, I think I'd like Fitness and Self and maybe a fashion magazine in there. :)

I love hungry girl recipes, so simple! I subscribe to Clean Eating, Real Simple, and Oxygen. They are so much cheaper to get a subscription instead of buying them individually, it's crazy!!!

Saw Mama Mia, it is an amazing play, the music really gets you in a good mood.

Keep the end goal in mind, one slip up won't stop you!

I used to usher and see shows for free in high school. I wasn't very excited about "Mamma Mia," but it's a lot of fun in theaters. Almost as fun as the movie--and no Pierce Brosnan's singing!
