Mexican-Flavored Chicken Creations, 6 Miles, Upper Body Circuit, Winner Winner

Thanks you guys! We did have a great weekend with great friends. Sounds like you all had some fun too and that most of us agree- Sundays are best spent relaxing and being lazy! We deserve it! :)

So you may remember last week when I made 8 servings Mexican-flavored chicken: I just threw 2 pounds of chicken, a can of hot rotel, a pack of taco seasoning and a diced jalapeno in the slow cooker. Then I shredded the chicken. The idea was that the chicken would be ready to go for multiple recipes! Here’s what we did with it!

2 servings - Tostados (with refried beans and avocado)

My serving with a side of greens!

2 servings - Mexican Wraps (big tortilla stuffed with chicken, beans, lettuce and avocado)

1 serving - Taco Salad (big bed of lettuce covered with chicken, avocado and cilantro salad dressing)

Yum... loved those avocado chunks


3 servings - Chicken enchilada bake (bake at 450; line square glass pan with 3 corn tortillas, add chicken, add ½ can enchilada sauce; add 3 corn tortillas; add can of spicy beans; add 2 corn tortillas; add remainder of enchilada sauce and top with cheese)

YUM! This made it SO easy – next time I’m going to do Mexican-flavored beef or maybe Italian-flavored chicken – TOO easy!!

Aside from the Mexican mixes, not much was up yesterday! Just read and chilled. Austin was CRAVING Thai and as you may have noticed we rarely go out to eat! So he ordered in his favorite Rasa Sayung, panang curry chicken, spring rolls and coconut soup. Oh my! I ate too much and was SO FULL. I ended up at 2,009 calories, 152 carbs, 95 fat grams and 119 protein grams. WOWZA on the fat grams - eek! Here's what I ate.

Today was a Monday! It wasn't too bad though - just worked, walked 4 miles during lunch (burned 165), worked more and walked 2 miles after lunch doing the upper body circuit from Friday (burned 133). Total burn for the day: 298. Then I headed home, cooked up a few things, watched a Castle with Austin, ate leftover Thai food and got going on my book - I hope to finish it tonight!! I ended up at 1,676 calories, 182 carbs, 71 fat grams and 89 protein grams. Here's what I ate.

That's a great idea to make the chicken ahead of time. I really think I need a crock pot in my life.

I won some coupons for chocolate milk, some fiber one poptarts and some yogurt. Oh, and that Zevia soda but I didnt like it.

Also, how ridiculously GOOD does your food look?! A woman after my own heart. Me and mexican food, we go way back. If only I knew how to cook my own!
