4 Pairs of Shoes, Meatless Lasagna Recipe, 3 Miles + ST

Thanks you guys! We REALLY liked the spicy spaghetti pie. It's amazing what a little heavy cream can do to make something taste so creamy! And GO TEAM EDWARD! Fo sho. If I had watched the movies and not read the books I could see it maybe being a toss-up, but in the books, to me, Jacob has got NOTHING on Edward!! Okay, enough. haha So...I ordered 3 pairs of Blowfish shoes last week and they came in yesterday - yessss.

(I ordered the fourth pair Monday- they should be in next week!) Love these - think they'll go great with dresses & skirts!
These are probably the most funky - I can see them with leggings and skinny jeans though!
These will be great everyday sandals to trade out with my current brown Blowfish gladiators
And these are just fun funky - love the low heel, love the zipper, heart all of the buckles - think I'll have fun wearing these with dresses & skirts to alternate with my Jeffrey Campbell's (prob only wear these at nights/weekends - little too funky for the officina)
I just LOVE buying new shoes!! Can't wait for the little black ones to get in. I'm wearing the top pair today - they're SO comfortable, it's like walking on a cloud!

So last night me and Austin had a few drinkies after I posted which pushed me over the edge to 2,020 calories, 204 carbs, 63 fat grams and 91 protein grams. Here's what I ate and drank. Not too bad, definitely glad I got in the 4-mile walk at lunchtime! I also had meals based on TWO new recipes! Here's one adapted from the fabulous For the Love of Cooking:

Mushroom and Spinach Lasagna
4 Servings
one serving pictured - YUM!

1 tbsp olive oil
8 oz shitake mushrooms, sliced
8 oz button mushrooms, sliced
½ cup sweet yellow onion, diced
1 tbsp minced garlic
2 - 4 tbsp fresh basil, chopped
1 to 1 ½ cups spinach
1/2 tsp dried oregano
Sea salt and freshly cracked pepper, to taste
400 grams fat-free ricotta cheese
1 egg
2 tbsp parmesan cheese
6 no-boil lasagna noodles
160 grams mozzarella cheese, shredded (divided)
3 cups Classico Tomato & Basil spaghetti sauce

The tray for four servings!

Preheat oven to 375. In a skillet over medium heat, add olive oil and cook mushrooms and onion for 10-12 minutes or until tender; add garlic and cook for 60 seconds, stirring frequently. Season with sea salt and freshly cracked pepper. In a large bowl, add ricotta, egg, 60 grams of mozzarella cheese, parmesan cheese, oregano, basil, sea salt and pepper to taste. Combine until mixed thoroughly. Layer an 8 x 8 inch baking pan with one cup spaghetti sauce. Lay two noodles on top. Spread half of ricotta mixture on the noodles. Then spoon half of mushroom mixture on top and finish by layering on spinach leaves. Repeat with one cup sauce, two noodles, remainder of ricotta mixture, remainder of mushroom mixture and remainder of spinach leaves. Top with last two noodles. Then top with remaining cup of sauce and remaining 100 grams of cheese. Bake covered in a preheated oven at 375 degrees for 30 minutes. Uncover and bake for 15 minutes.

Check the yummilicious layers! Sorry... I don't make a lot of lasagna and find it exciting!

Nutritional Information: 434 calories, 42 carbs, 16 fat grams and 32 protein grams.

Tip: When covering with foil – spray foil well with nonstick cooking spray so the cheese doesn’t stick when removed.

Review: Amazing, amazing, nothing short of amazing. And you guys - it's meatless! Shock! But it was so filling with all of those mushrooms and it tasted absolutely sinful. Austin said he "didn't even miss the meat." WOO! This is a regular. Fo sho. It also marks my first time using no-boil noodles - i'm NEVER going back. They made this SO easy and much less time consuming.

Today is just work, walked 3 miles during lunch + upper body ST, and I plan to run after work before going to Stacy's for book club sleepover! Yay! Tonight will be me, Devon, Stacy, Shana & Mon - great group!

Q: What are you doing tonight?

Q: Which is your favorite shoe above? (assuming you like at least one! and of course I won't be offended if you dislike them all - promise!)

LOVE Blowfish Shoes. I bought a pair of raspberry colored flats and wore them so much they started to come apart!

And don't make me pick a favorite shoe--they're all adorable!

I like the third one. I tend to gravitate towards flats.

That lasagna looks like a keeper. I want to make it soon.

That lasagna looks off the chain! I can't choose a pair of shoes. All are adorable! I like that they aren't too high either. Way practical!

My inlaws left, so the hubs and are are laying low. I plan to catch up on the housework/laundry and get some facials scheduled for this week! Feel free to check out my website www.marykay.com/tyler_soendker! Have a great one!

Believe it or not, I own exactly four pairs of shoes: flip flops, work shoes, gym shoes and sandals.

My daughter would love your shoe choices though!

Andrew and I love veggie (gluten free) lasagna!! It's one of the few meatless dishes that he really, really likes!

My favorite of your shoes are the ones in the 3rd picture. Those are the ones I'd be most likely to wear. They are so cute!!

I like the gladiator sandals. I like pairing tough looking sandals with girly dresses or tops with ruffles.
