C25K, Book Club Sleepover, New Recipe, Boutique Sale

Thanks you guys! I've already worn two of the shoes - SO comfortable! Love that there's lots of lasagna lovers out there - I made another new one today - SO good!

So Friday after my 3-mile + upper body ST filled lunch I just worked, then hit up the corporate gym for C25K! I did it again - I ran for 30 minutes straight at 6.3 mph. WOO! However, it was NOT a good run. I was alone. The gym was empty. It was like every minute I wanted to stop. Not feeling it at all. But I kept pushing myself and made it through - woo! Then I showered and headed over to Stacy's for bookclub sleepover! Me, Devon, Mon, Shana and Stacy had so much fun! Stacy made a great healthy pasta dinner with salad and bread, and we had yummy drinkies! Our only problem was that we all had so much to talk about we stayed up WAY too late! Oh well - totes worth it! I ended up at 2,119 calories, 182 carbs, 53 fat grams and 90 protein grams. Here's what I ate and drank.

Saturday we woke up way too early for how late we stayed up, but we had to get to the boutique sale! Me and Stacy were there when the doors opened and quickly picked up some great goods! I got 3 pair of Nike tempo shorts (my fave running shorts) for $19 each, a dress for $20, a dress for $30 and a skirt for $20 - GREAT sale! So glad we went!

Afterwards, me and Stacy had a yummy Mexican lunch in Atlantic Station at Rosa Mexicana. We got the made-in-front-of-you guacamole - AMAZING, and verde enchiladas. I had 1 of 2 enchiladas, lots of guac and chips and the black beans were GREAT. Afterwards I raced home and took a 3-hour nap. Glorious! Then it was time for Matilda's with Katie & Chris - there was a cool band playing and it's like BYOB kind of thing! I put together an appetizer platter and we headed out to meet them. I really enjoyed the place, especially the indoor art gallery, and of course it was great to catch up with Katie & Cush.

I stayed up a bit too late (again), and ended up at 1,682 calories, 72 fat grams, 128 carbs and 47 protein grams. Here's what I ate.

Oh, and here is another recipe I made & ate this past week. Lemon Chicken Spaghetti (inspired by a Rachel Ray recipe that I found in one of my friend Ruje's cookbooks!) Makes 4 Servings
this is one serving!

Salt
16 oz. chicken, diced cooked in salt and pepper
8 oz. spaghetti
1 tbsp olive
2 tsp minced garlic
½ tsp red pepper flakes
Zest/juice of 1 lemons
3 tbsp heavy cream
¼ cup parmesan, divided
½ cup basil, finely diced

Cook diced chicken in a medium-sized pan sprayed with nonstick cooking spray over medium heat. Cook pasta according to instructions. Reserve ½ cup cooking water. Heat olive oil, garlic, red pepper, lemon zest and juice and heavy cream. Str for 2-3 minutes. Add 2 tbsp parmesan and ¼ cup basil. Stir for 1-2 minutes. Add pasta and cooking water. Stir for 3-4 minutes. Divide into four servings, add four ounces chicken to each, and top with remaining parmesan and basil.

Nutritional Information: 431 calories, 39 carbs, 12 fat grams and 39 protein grams.

Review: This one was great! The zest made it super powerful and lemony, and the spice helped add to that so flavor wasn’t an issue. I will say that after reheating it wasn’t as creamy as the cream kind of stuck to the noodles, but I still liked it. Next time, I’m going to try a smaller noodle and call it Lemon Chicken Penne or whatever – this will reheat better – no doubt. I will definitely make this recipes again.

So today I made not one, not two, not three but FOUR new recipes! So exciting! (for me - sorry - I love to make new stuff!) I'll make sure to post this week as I eat them!! I also finished my audio book, James Patterson's Double Cross - i'll have to post the review!

I cook on Sundays too! That lemon chicken sounds really good - similar to a chicken piccata! Today I milled some wheat and made 5 loaves of bread, three kinds of muffins and made sweet barbequed chicken for dinner. Busy day in the kitchen.

Cooking is my thing on Sundays too! It's a nice way to ease back into being productive.

About these Tempo shorts -- I feel like everyone loves them. My problem with running in shorts is that they ride up like crazy. My hips are the widest point on my body so five minutes into my run my shorts morph from respectable to daisy dukes. I HATE to constantly pull at my shorts during a run, so I usually just opt for capris. Do your tempos creep up on you? Or do they miraculously stay put? (If so, I may have to snag a pair!)

My favorite things to do on Sunday all revolve around getting ready for the week ahead: shopping (food, usually), meal planning, cleaning, and cooking a nice dinner:)

Sundays after church we go to lunch with friends and then we come home and lounge for a couple of hours.

I want to try and make plantains with black beans and sour cream.
