Time to Get a New Car, Return of my Partner in Crime, New Breakfast Recipe, 3.25 Miles

Thanks you guys! I'm loving the new recipe and of course - pasta bakes are the bomb. Sounds like most of us like a mix of jam-packed weekends and relaxing ones. I do too - I just find my relaxing ones don't come around until the winter! (and spring usually since I'm sick a lot due to my allergies/sinuses). Summer/Fall wear me OUT! Yesterday was a pretty good day! One major reason - STACY IS BACK! She had a wonderful honeymoon in Belize but now my bestie/workout buddy/lunch buddy/break buddy/gossip buddy/Bobbsey Twin is back! Blessed be the day! Aside from totally catching up with her and enjoying every minute of it, I worked, walked 3.25 miles during lunch and did upper body ST, and worked more. After work I headed straight to the Lexus dealership - time to switch up my ride. I liked the RX, but then headed over to Infiniti to look at the FX. I liked it too! Now I need to decide - i'm ready to buy a car this week!

To me they kinda look the same, both cross overs, both with the same features, etc. - but they drive SO different. The lexus drives more like a car, it's distribution is more 60/40 so it rocks a bit (like a boat!), the seats are cushy and the steering is looser. The infiniti drives more like a sports car, it's distribution is 50/50 so you feel the road more, it's louder (engine), it has bucket seats like a race car and it has much more get up and go. I can't decide! It was 8:30 before we knew it and we wanted to rehash the cars, so we swung by a Mexican restaurant and I had a chicken taco, chicken enchilada and some chips and salsa, then we headed home, looked for more cars on AutoTrader.com, and called it a night! Pretty great Tuesday! I ended up at 1,724 calories, 178 carbs, 57 fat grams and 101 protein grams. Here's what I ate.

Ham Hash Brown Casserole
Makes 4 Servings

7 eggs
4 cups hash brown potatoes
1 cup fat-free evaporated milk
1cup 75% cabot cheese, shredded
1 tsp salt
1 cup diced onion
½ tsp pepper
1 ½ cups diced green and/or red pepper
¼ tsp cayenne pepper
12 slices Hormel Natural choice ham, diced

Mix eggs and milk in a bowl. Add remaining ingredients and stir well. Add to a 9 x 13 dish sprayed with nonstick cooking spray. Bake uncovered in 350 degree oven for 45-50 minutes or until a knife inserted comes clean.

Nutritional Information: 427 calories, 41 carbs, 13 fat grams and 35 protein grams.

Review: Had it for breakfast yesterday - LOVE it. Lots of food - I mean really, that pan was FOUR large servings. It had great flavor though - loved the pepper and the veggies really helped break up the eggs/potatoes. I enjoyed! I could see next time adding a bit more ham and maybe an egg or something to take this up to 6 servings! (I prefer 6 serving breakfasts so I don't have to make as many!)

Q: What's your ride? Are you getting along or are you researching for a replacement? I've always liked "funky" cars. Drove a bug from 2001 - 2006, then I got a PT cruiser and have been driving it ever since. Now, I'm ready to be "an adult" and get a less funky car! Although having a car payment again is going to SUCK.

Q: Which do you like better: Lexus or Inifini? I'm torn.
