Q: Which color do you eat the most? I have green and white covered - time to get the fruit back in my life, and to find more recipes that have more color. I love zucchini and broccoli - and need to find more recipes with them. And I have got to try eggplant one more time - I want to like it so much.
I beeped over to Healthified Kitchen to find some rainbow recipes. I definitely need to make some more, but here are a few that caught my eye (outside of salads because to me almost ALL salads are rainbows, which is why they ROCK):
Greek Pizza: Olives, tomatoes, red onions, artichoke hearts
Garden Summer Pasta: tomatoes, basil, zucchini,
Spinach Mushroom Pizza: spinach, mushrooms, red onions, tomatoes
Mediterranean Wrap:cucumber, tomato, parsley, lemon
Mushroom and Spinach Lasagna: Mushrooms, onions, basil, spinach
Aside from 'rainbow foods' not much went on yesterday! I read your comments - thanks for sharing your great goals for March! Sounds like we're all ready for some spring time! And also, thanks for your comments on the new Chicken & Cheese Crescent Pockets. Other than comment reading, I just worked, walked 3.5 miles during lunch (incline 0-2), worked more and then walked 2.5 miles after work (incline 4 - 8). Not bad! Then I went home to my fam, watched a couple of Castles, played with the baby poodles, read your bloggies, and called it a night at, asleep by 10:15 - NICE!
Q: What's your most colorful meal or recipe?
Note: i'm going to change my goal of 'make 5 recipes' to 'make 5 recipes; at least 2 rainbow ones and 1 meatless one!)
Double note: I usually don't incline over 4. I'm DEF going to incline more like this. I did 1 mile at incline 4, then 1/2 mile at incline 6, 1/2 mile at incline 8, then 1/2 back at 4. This was GREAT!

I'm pretty good about a rainbow. We love to go to DeKalb Farmer's Market and get new things to try -- (although sometimes we get stuff home and can't figure out what to do with it!)
My favorite is Purple Potatoes; Sliced Yellow Tomatoes; White Asparagus w/ Grilled Shark. Usually with an arugula, tomato, mozza/balsamic ving. sald on the side.
EggPlant. That's a tough one. I found a recipe once for sauteed eggplant. I used coconut oil (looks like Crisco, but is made from coconut) and it gave it an "island flavor." You just chop it into squares, heat the oil, and cook. The eggplant will REALLY absorb the oil, but that's not horrible - if you're using 'good fats.' It was kind of like chips? when it was done.
Otherwise, we grill them with yellow squash and zucchini and eat off the grill.
I looooove doing "intervals" on the treadmill. It makes the time go by so much faster!
I try to eat the rainbow as much as possible. I usually have fruit with breakfast, a salad and a small piece of fruit with lunch, and then usually try to have at least one veggie with dinner. However, I do find myself stuck in the yellow, white, green color scheme!
I don't eat a rainbow, but I need to start! My foods are mostly green, brown and white. Doesn't sound to appealing now, does it?
I do a pretty good job at eating the rainbow! Orange is probably my favorite...carrots (daily addiction), cantaloupe, pumpkin & other squash... I think I lack most in purple. I eat eggplant every once in a while, but I need to "beef" up my purple. Sounds like you had a very nice day! And the Mediterranean Wrap looks SO good...wish the man was more of a mediterranean fan. Most colorful dish? probably stir fry or hot and cold sesame noodles (I usually put in tons of different veggies).
I really try and eat the rainbow. Lot's of fruits and veggies. If I could my plate would always be brown and white. Darn crabs...why do I love them????
I am definitely all over red and green. I use red bell peppers like they're free (and they're not), green bell peppers, spinach, zucchini. I love yellow squash and yellow bell peppers and of course sweet potatoes for orange. I think my more colorful dishes are stir fries or a veggie pasta.
I actually try to eat "the rainbow" whenever possible. Fortunatly, I love veggies so it's not usually hard for me.
I definitely try to eat a lot of color. It's an easy way of knowing that I'm getting enough nutrients.
I actually make a game out of buying an eating the rainbow with the toddler. Not only is it fun for him, but it reminds me to get all the colors in... :)
One of my most colorful dishes is my "summer salad" which has tomatoes, cucumbers, edamame, black beans, corn, red onions, avocado, and lemon. Can't wait for summer to get here! :)
ummm does a chargrilled chicken salad from chickfila count as my most colorful meal? bc it is.
Ha, I like the idea of eating the rainbow. It's easier than being neurotic about getting in all of the right nutrients.
Hmmm, I definitely don't get enough purple.
Maybe "blue raspberry" should count...
