Are You Eating the Rainbow?

I'm not. I love the idea of a colorful plate - not just because it's super healthy but because it's SO pretty! Focusing more on veggies (as I rarely cook with fruit), I tend to do red (with tomatoes and cranberries), green (with lettuce and spinach), yellow (with corn and lemons) and white (with mushrooms, onions and potatoes). But I don't always do these at the same time, and I definitely need to work on getting in more orange and blue. Check out this site which outlines rainbow food!

Q: Which color do you eat the most? I have green and white covered - time to get the fruit back in my life, and to find more recipes that have more color. I love zucchini and broccoli - and need to find more recipes with them. And I have got to try eggplant one more time - I want to like it so much.

I beeped over to Healthified Kitchen to find some rainbow recipes. I definitely need to make some more, but here are a few that caught my eye (outside of salads because to me almost ALL salads are rainbows, which is why they ROCK):

Greek Pizza: Olives, tomatoes, red onions, artichoke hearts

Garden Summer Pasta: tomatoes, basil, zucchini,

Spinach Mushroom Pizza: spinach, mushrooms, red onions, tomatoes

Mediterranean Wrap:cucumber, tomato, parsley, lemon

Mushroom and Spinach Lasagna: Mushrooms, onions, basil, spinach

Aside from 'rainbow foods' not much went on yesterday! I read your comments - thanks for sharing your great goals for March! Sounds like we're all ready for some spring time! And also, thanks for your comments on the new Chicken & Cheese Crescent Pockets. Other than comment reading, I just worked, walked 3.5 miles during lunch (incline 0-2), worked more and then walked 2.5 miles after work (incline 4 - 8). Not bad! Then I went home to my fam, watched a couple of Castles, played with the baby poodles, read your bloggies, and called it a night at, asleep by 10:15 - NICE!

Q: What's your most colorful meal or recipe?

Note: i'm going to change my goal of 'make 5 recipes' to 'make 5 recipes; at least 2 rainbow ones and 1 meatless one!)
Double note: I usually don't incline over 4. I'm DEF going to incline more like this. I did 1 mile at incline 4, then 1/2 mile at incline 6, 1/2 mile at incline 8, then 1/2 back at 4. This was GREAT!
