1 pouch boca crumbles
4 tbsp egg whites
4 tbsp minced onion
½ tsp salt
½ tsp garlic salt or powder
2 tbsp ketchup
2 whole wheat Pitas
½ cup tomato sauce (Muir Glen)
2 tsp Parmesan
Optional: additional salt, roasted red pepper, and garlic powder
I preheated the oven to 400 degrees, then sliced the pitas across two inches from the top to create pockets. Then I took the extra pita and cut into tiny pieces. I put the pieces in a bowl and covered egg whites and let is sit for 3 minutes. Next, I defrosted the Boca crumbles in the microwave for 30 seconds, and added the crumbles, minced onion, salt, garlic and ketchup to the egg/pita-crumb mixture. Then I stirred the mixture for a while! Then I set out wax paper and formed the mixture into 6 tight balls. When they were ready, I put them in the oven on a pan sprayed with PAM and cooked for 15 minutes.
Meanwhile, I heated the tomato sauce and seasoned it with a bit more salt and I mixed in some red pepper flakes. About 5 minutes before the meat balls were done – I put the pitas on the pan so they would toast. When the pitas and meatballs were done, I fully dipped each meatball in sauce and placed it carefully into a pita pocket (3/pocket). Once each pocket was full of 3 balls, I spooned in the leftover sauce and added 1 tsp of parmesan. They were so good! Me and Austin both loved them – his especially – the meatball sub is his fave! They only had 267 calories, 2 fat grams, 42 carbohydrates and 23 grams of protein each – but they were SO filling.
Later when dinner rolled around I tried another new one – Lime Chicken with white rice from Kitchen Parade. I used these ingredients for two servings:
6 tbsp Texas Pete fat-free honey mustard
1 tbsp lime juice
1 garlic clove, minced
1/2 tablespoon light soy sauce
4 boneless, skinless chicken tenders (each about 2 ounces)
Later when dinner rolled around I tried another new one – Lime Chicken with white rice from Kitchen Parade. I used these ingredients for two servings:
6 tbsp Texas Pete fat-free honey mustard
1 tbsp lime juice
1 garlic clove, minced
1/2 tablespoon light soy sauce
4 boneless, skinless chicken tenders (each about 2 ounces)
I set the oven to broil, put the chicken in the microwave to defrost and got a bowl and stirred together the mustard, lime juice, garlic and soy sauce. Once the chicken was done defrosting, I got a square pan out, sprayed it with PAM and laid the chicken in the pan. I then coated the chicken in half of the mixture and put it into broil for 5 minutes. As it broiled, I cooked 1.5 cups white rice in the microwave. Once the 5 minutes was up, I flipped over the chicken and covered it with the rest of the sauce and let it broil for another 5 minutes. Then I served up the rice, and served the chicken on top. It was SO GOOD! We both loved it, too. It had 407 calories, 1 fat gram 69 carbohydrates and 27 grams of protein.
So 2 for 2 – fantastic! Other than cooking, and finding things to cook, I pretty much hung out and watched Friday Night Lights with Reuben all day! Very relaxing and fun. At the end of the day I had 1,351 calories, 23 fat grams, 205 carbs and 78 grams of protein – MUCH better than yesterday. :) Here’s what I ate.

The chicken sounds really good - and easy, too! I need to spend some more time relying on the microwave. I don't know why but I'm always using the stove/oven...and it takes so much longer! Hope you had a good Monday!
