Today I was 119 again. Dang! Work was better though – MUCH less stressful, and I was able to get in 5 miles and a leg workout. Was supposed to do abs, but really needed to get home to Reuben, had to go by the library, etc. I was STARVING when I got home, so I made a little turkey/FF mayo/FF swiss sandwich while I cooked a simple chicken/rice dinner with a new favorite product – Trader Joe’s Red Curry Sauce! It was SO GOOD – I never would have found if I hadn’t gone to the store to get stuff for Follow My Weigh’s recipe a couple weeks ago! Basically I just cooked white rice (.75 cup) and measured out 4 oz. boneless, skinless chicken breast.
I defrosted it then, while the rice was cooking, I cooked it in a pan with 1 tbsp of sauce and 1 tbsp of water. After about 2 minutes I flipped the chicken, then added another tbsp of sauce and a lot of red pepper flakes for spice! Then I just poured it over the rice and ate it up – fab & EASY – 10 minutes from start to finish including defrosting time! Spark says the recipe had 405 calories, 58 carbs, 4 fat grams and 27 grams of protein. I think that’s awesome for Thai curry! Next time (when I’m not STARVING) I’ll add bell pepper and broccoli and probably take that rice down to a ½ cup to reduce the carbs. We’ll see. Either way – Trader Joe’s – fab product!
Now I’m cuddled in bed watching House Bunny. It’s cute! I want the soundtrack. Although I hear they didn’t make a soundtrack, but I found a few spots online that gave the full list. I think a lot will be good workout songs! Here they are if you’re interested. I always “listen” to them on youtube before buying on Amazon

Madison: Thanks! I hope I can do it.... so excited!! Yes, you must, I made it again tonight for Austin's lunch tomorrow. He snuck a bite and was awed!
HK: I hope so! It averages about 19.5 miles each week, so almost 3 a day. But I only work out 4-5 days so I'm just going to focus on weeks instead of days and just do 4-5 miles when I do cardio like I do now!!

DG: :) Thanks – you’re so sweet!! Oh they’re SO fun. Obvi, with anything, it has a lot to do with the instructor, but it’s great because you work those random muscles that you may or may not hit doing standard ST!

Crabby: Yes – I was hesitant but now I can tell it’s going to be a household staple! The key is really adding in those flakes to spice it up to your preference – and for me, adding water so it’s less thick (I prefer it more soupy and it makes 2 tbsp go farther). The serving is 4… but I wasn’t willing to invest 80 calories in the sauce!!
