Days 331 – 334: Wonderful Weekend, 2 Movie Reviews, Crappy Monday, New Recipe, Mean Girl, Beer Fest, and More!

Sorry i've been so MIA, friends! I'm SO behind - eek! Here goes catch up time - can't wait to catch up on your bloggies in the a.m.!! Hope you had great weekends. :) Here goes mine....

Friday was a great day! I got lots done at work, walked 3 miles during lunch, stayed busy all afternoon, then went to the gym for another 2 miles (to get my 100 for the month!), legs and abs. Here’s the workout I did.



I raced home and was SO pumped to make Oh Livin’s Perfect Garden Summer Pasta. Here’s a variation based on what we had on hand (no fresh parsley or oregano) and I added chicken!

Mixing it up!


My yummy bowl!

5 oz. tomatoes, cored and finely chopped

1 tbsp fresh chopped basil

¼ tsp dried parsley

1/8 tsp oregano

2 tsp minced garlic

1/8 tsp salt

1/8 tsp red pepper flakes

1 tbsp extra-virgin olive oil + 1tsp for sautéing zucchini

1 tsp Sherry vinegar

4 ounces linguine

1 baby zucchini, diced

2 tbsp reduced fat parmesan, plus more for serving

In a large bowl, toss the tomatoes with the parsley, garlic, salt, flakes, sherry and olive oil. In a sauté pan over medium heat, add 1 tsp olive oil and the diced zucchini. Cook for 2 minutes until BARELY tender. Remove from heat. In a large pot of boiling salted water, cook the linguine until al dente; drain well. Add chicken to the zucchini pan; cook in nonstick spray with salt until no longer pink. Add the linguine to the bowl along with the zucchini and chicken and toss. Add cheese, toss again and serve in bowls.

Um.. FABULOUS! I loved how light it was but the olive oil/parm made a yummy mixture – it was great. Austin loved it too. Yay! After dinner we headed out to Lincoln/Shana’s for a few drinks which ended up being 4 beers and a vodka/SF redbull! Reuben didn't make it long... hehe

He's all wrapped up because he got wet... then he got cold. Crazy pupper.

We had a blast as always, but we went to bed considerably earlier than last time! (thank gawd!) haha I ended up at 2,181 calories, 241 carbs, 46 fat grams and 100 protein grams. Here’s what I ate.

Saturday we got up at Shana/Lincoln’s around 9 a.m. and headed home to breakfast sandwiches and a nice nap. Around 11 I started getting it together and headed over to the gym for back/biceps and a 2-mile walk with 2 In Touch magazines. Nice. Here's the workout!


I left the gym and went straight to the salon for some eyebrow clean up and a pedicure! I randomly chose lilac nail polish (probably inspired by The Weigh I am’s orange toes!) – and it felt great!

I raced home, hopped in the shower and me and Austin headed out for a Beer Fest! Basically, my friend Mary’s friends from forever had a party where everyone brings a 6-pack of beer (like weird gourmet beer) and you register it and we all vote at the end for 1st, 2nd and worst. And of course it comes with flip cup, cornhole and shenanigans. We had a blasty getting to know her buddies, playing games, tasting CRAZY beer (some nasty some fabulous like carpri suns), etc. The partay started at 4… we got there at 5:30… we left at midnight to go to bars (totally unplanned – Scott wasn’t feeling good because he “won” worst beer and had to drink a 40-ounce of Colt 45… ewwww). But we ran into one of Austin’s old friends (he lived in Atlanta from birth to 16) so we hung out with him and his girlfriend and ended up at Pub 71 dancing to our FAVORITE band Justin until 3! Crazy night. We cabbed it home, made chicken/rice (were starving from no dinner!) and passed out with baby Reuben. I ended up at 2,521 calories, 222 carbs, 41 fat grams and 115 protein grams. Here’s what I ate.

SIDEBAR: A girl (not one of Mary’s friends – a guest of one of her friends) was weird. SO nice at first, like we hung out and were having fun…. Then she kind of geeked out and THEN another girl asked if I had a dog and we were talking about him and I grabbed my phone to show her a picture. Weird Girl was like let me see! I showed her and she goes “not cute.” I was like what? And she was like “your dog. Not cute at all. He’s like grayish and his hair’s weird. Not cute.” Um… what a bitch. She’s ready for her boyfriend to propose so I hope he does and I’ll be all congratulations! Let me see your ring. And then I’ll go “hmmmm that’s really ugly.” Yes, I’m mature. Who does that though?! Like wow… your kid isn’t cute. Um, evil.

Yesterday was going-to-get-cars, slack of all slacks, movie-watching day!! The weather was still crappy, I was tired, BLAH. I ended up with Mary’s keys somehow so me and Austin drove to get her car on the way to their house to get my car! Haha Good stuff. We had a fabulous Mexican lunch at Matador Cantina with Mary, Scott and Scott’s bro Jay – good times reminiscing about the night before, and I got to tell Mary about the psycho girl! About 900 calories later we got home and Austin hit up the xBox and I started on Bride Wars. Cute!! It wasn’t a fave but it definitely had a little more depth to it than I thought it would based on the premise. I personally can’t stand watching people sabotage each other (so duh – not the best movie for me to see!) but there were a couple of surprises that I enjoyed – and I even cried. Twice. Hehe After the movie I threw together a random dinner: tomoato/mozzarella/basil with balsamic vinegar (i.e. caprese salad!), a yogurt, a banana. Nice! Then I settled in for Marley and Me.

I loved it. I loved their story – I thought it was adorable and endearing watching their lives play out. I TOTALLY bought them as married, think Owen is hilarious and just love, love, loved it. Cried so much – can’t wait to watch it again. After the second movie I had some grapes and made “fried” rice for tomorrow and got my clothes, gym bag, etc. together. I also finished Kisscut (Karin Slaughter's second book in her Grant Park series). OMG - CRAZY. Such a good mystery - had me guessing until the end as always. I love her!! She's in town this weekend - I hope to make it to her signing!! Anywho, I ended up at 1,408 calories, 178 carbs, 53 fat grams and 52 protein grams. Eek! Here’s what I ate.

Today (Monday) was SUCH a blah day – lots of annoyingly frustrating work stuff. Grrr. Therefore I’ll focus on the positive! I was able to get in 3.5 miles at lunch with Stacy! Then after work I drove straight over to the gym for another 1 mile (4.1 mph; 4 incline – 92 calories burned) and a great chest, triceps, shoulder workout with Stacy (35 minutes; 160 calories burned). My arms are SUPER sore already – woo! I left the gym, caught up with my sister via telephono and got home to Austin mowing the grass and happy pupper! I cooked dinner, watched Entourage, did laundry and am now SO tired! I ended up at 1,555 calories, 218 carbs, 31 fat grams and 95 protein grams. Here’s what I ate.

The summer pasta sounds really good (but your recipes are always great!). Beer fest sounds like fun, except for mean girl. She sounds simply, well, mean...

Oh heeeelll no! I would have told that girl off right then and there. No one insults my baby!

Sounds like a fun filled weekend though. Vodka/SF red bull is usually my downfall. I love it so much but it tends to put me over the edge :)

That would have been my second choice :) Those were my wedding colors, lilac, orange and silver. It sounds weird but it was really pretty!

OMG Mean girl!! If someone called my dog not cute, I wouldn't even wait for her to get engaged, I would have told her right then and there that SHE was NOT CUTE. NOT CUTE AT ALL. Period.
PS/ Im soo glad you liked the pasta, I looooooove it and glad I was able to share it!

That pasta looks wonderful! I love pastas with a lighter sauce- so refreshing during the summer! Great job with all of your workouts. Love getting pedicures- such a nice treat :) Enjoy the week
