New Breakfast Recipe, New Pizza Recipe and New Books!

Happy Monday! I so enjoyed checking out your fabulous Halloween weekends! Looks like while some of us indulged a bit (some more then others.... like me!), we all had great times and are ready to get back to it! Love it! So, backing up, yesterday I was a bit of a bottomless pit – nonstop hungry and nothing could fill me up! Blah! I ended up at 1,806 calories, 211 carbs, 56 fat grams and 98 protein grams. Here’s what I ate.

Today I made Real Mom Kitchen’s Brunch Pizza Squares. Here’s a very slight variation of her recipe; it makes SIX servings:


10 oz. Jimmy Dean Light Sausage
1 tube (8 oz.) reduced fat refrigerated crescent rolls
4 eggs
2 tbsp fat-free milk
1 cup shredded fat-free cheddar cheese
Salt and pepper to taste

In a skillet, cook sausage over medium heat until no longer pink; drain. Unroll crescent dough into a lightly greased 13 x 9 x 2 inch baking pan. Press dough ½ inch up the sides and seal the seams between triangles by pressing down. Sprinkle with sausage. In a bowl, beat the eggs and milk. Add salt and pepper and pour over sausage. Sprinkle with cheese. Bake, covered, at 400 for 10 minutes. Remove foil and bake for 10 minutes or until the crust is golden brown and the cheese is melted (may need to cook for another 3-5 minutes). Nutritional Information: 325 calories, 20 carbs, 18 fat grams and 20 protein grams. So yes, pretty high in fat, but having it on days when I have lower-fat meals planned for lunch and dinner will balance it out. We both REALLY liked it - great size serving and very filling. Also - YUMMY! And inexpensive - the crescents were $1 and the sausage was $2.20 - throw in eggs and some cheese and you're looking at like $.75 a serving - love it!

Another shot - I swear even though the FF cheese doesn't melt it's yummy! haha



I also chose my next books! For reading (while on Treadmill), I'm starting Stephanie Meyer's The Host tomorrow!

For commuting to and from work, I'm going with Janice Kaplan's Looks to Die For.

Now i'm semi-excited about going to work tomorrow! haha I decided no library yet. Not until I finish what's in my house and I have LOTS of audio books/printed books to read!

So I ended up having a totally chill day. I didn’t even leave! Just read books, watched TV, read blogs, did laundry, hung out with Reuben, etc. I also cooked LOTS of stuff and reworked the weekly meal plan based on some yummy recipes/blogs I found. In fact, I made a new recipe for dinner. Instead of doing plain jane pepperoni pizzas – I made a new pizza from Favorite Family RecipesTomato Pesto Pizza! Here is the recipe I used for ONE mini pizza:



4 oz. Trader Joe’s Pizza Dough
½ tsp dried basil
½ tbsp reduced fat parmesan cheese
25 grams Trader Joe’s pesto
30 grams Trader Joe’s Fresh Mozzarella
6 Cherry tomatoes, sliced
Salt to taste

Preheat oven to 400. Spread out dough. Spread pesto on dough, and top with mozzarella. Add tomatoes, parmesan and basil. Sprinkle with salt if you would like. Bake for 12-14 minutes until cheese is melted. Nutritional Information: 488 calories, 55 carbs, 22 fat grams and 16 protein grams. It was SO good – almost tasted like flat bread since I made them super thin! Love, love loved it – will be making again. Next time I hope to have a large tomato so I can do big slices!!

Now it’s about 8 p.m. and I’m definitely done eating – so here are today’s stats: 1,724 calories, 201 carbs, 64 fat grams and 83 protein grams. Here’s what I ate. I haven’t done cardio – just wasn’t feeling it! I do plan to do abs tonight! I hope you all had great Mondays!! A couple of questions:

1. What is your favorite pizza?! I'm trying another later this week - 4-cheese pepperoni!
2. What is your favorite breakfast "bread"? I think I'd have to say English muffins.... they're just so versatile!

That pizza looks good. I'm not sure what my favorite pizza is. I like any with vegetables, I guess.

I'm also an english muffin fan. But really I just like bread in general.

Both of those recipes look delicious!! I love TJ's ww pizza dough. It is my favorite!! :)

My favorite pizza is Andrew's buffalo blue cheese pizza he makes using GF crust. So sinfully delicious! :)

My favorite breakfast "bread" are probably bagels, though I don't eat them nearly as much as I would like. I like them with either some PB on top or plain with just a little bit of smart balance.

My fav pizza is veggie, def.. As for breakfast bread, do pancakes count?? If not, then whole wheat English muffins or bagels! I'm a carb kinda gal.

The tomato pesto pizza looks so so good! Sounds like you had a nice relaxing day- LOVES those and need more of them. Hmmm my favorite kind of pizza- onions and peppers! I'm sort of lame with breakfast and prefer a big ole bowl of fruit, sometimes with nut butter

I really can't believe how many books you get through. Now that I'm waiting for my body to heal (thanks, marathon), I really should follow in your example and get some good reads to slog through at the gym.

Hm, my favorite pizza is probably sundried tomato with spinach and mushrooms.

And my favorite breakfast bread? Hands down, biscuits. Mmm, I want some now!

I just like plain old cheese pizza. I think English muffins are a great breakfast bread, unless I'm going out - I'd love an everything bagel.

Sounds like a great day off to me - I love when I don't leave my house sometimes! :D

Have you ever made Mexican pizza? The base is a 1/2 cup of fat free refried beans mixed with 1/4 cup enchilada sauce.

Next add shredded chicken, corn and black beans (and fresh jalapenos if you are crazy like me) then top with low fat Monterary Jack cheese.

Bake at 425 for 15 minutes. Remove, let cool for 5 minutes, then sprinkle the top of the pizza with shredded lettuce.

The spice of the jalapeno with the melty cheese and crunchy lettuce is to die for.

SO FRICKEN GOOD!

I wish my husband would have never introduced me to authentic Chicago deep dish. It's like a heart attack on a plate but seriously no pizza is better!

You need to try that Black Bean Pizza I made a few weeks ago. I can send you the recipe if you want.

I too love english muffins! When I was growing up I called them wuffins. I was probably 20+ before I realized that wasn't there actual name.

1. My favorite pizza would be....

The Hawaiin Pizzas---pineapples, canadian bacon or ham.

Also, I love pepperoni and jalapeno pizza!

2. My favorite breakfast bread---I love Ezekials Cinnamon Raison bread! YUM!

My favorite pizza is always going to be sausage + peppers. I will never be able to be a vegetarian!
