Lots ‘O Cooking, New Recipe, Back to Running, 11 Miles + abs

Happy Wednesday!! Thank you all again for your sweet comments during my NY trip! We had such. a. blast. I'd do it again tomorrow if I could! (well not really, still recooping, but you know what I mean!) Here's what's been down since we got back from NY! I apologize in advance for the lack of photos - have misplaced my upload cord!!

So... Monday was SUCH a Monday, especially after the wonderful NY weekend! I just worked, walked 4 miles during lunch with Stacy, worked more and then headed straight home to cook this:

• 4 servings of Skillet bowtie lasagna
• 4 servings of bacon ranch slowcooker chicken
• 4 servings of fiesta chicken
• 6 servings of Breakfast Bake (new!)
• 4 servings of spicy thai chili linguine

Austin helped – so nice to have him around more now that he works from home! He’s loving not having to commute – I’m uber jealous! After cooking and cleaning up after myself we sat down to Skillet bowtie lasagna and a Flashforward, then we did some stuff around the house (decorating!) It was a great day all things considered; I ended up at 1,731 calories, 217 carbs, 45 fat grams and 101 protein grams. Here’s what I ate.

Tuesday I started the day with a dannon light & fit yogurt and a new recipe – Breakfast Bake!

Breakfast Bake

1 package Jimmy Dean Reduced Fat Sausage
1/3 cup chopped onion
½ cup fat-free grated cheddar cheese
½ cup 75% fat free cabot cheese
10 eggs, lightly beaten
1 tbsp milk
1 can (10-3/4 ounces) fat-free condensed cream of mushroom soup
Tony’s creole seasoning to taste

In a large skillet, cook sausage and onion over medium heat until meat is no longer pink; drain. Transfer to a greased 13-in. x 9-in. baking dish. Sprinkle with cheese. Combine eggs and soup; pour over cheese. Sprinkle with tony’s creole seasoning. Bake, uncovered, at 400° for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

Nutritional Information: 312 calories, 8 carbs, 19 fat grams and 25 carbs.
Review: Super good and flavorful! I liked how it was eggy, but also creamy due to the soup. I couldn’t taste the cheese very much but think I would have noticed if it wasn’t there. Next time I may add a bit more creole seasoning (and to the eggs rather than on top) – but that’s it – this is a keeper!

After breakfast I had a hot chocolate during my 11 o’clock meeting and then I was off to the gym for four miles (burning 165 calories). After my workout I was STARVING, had fiesta chicken and 8 or 9 TJ’s BBQ pop chips – love! All was good until my 3 o’clock meeting – had WAY too many Starburst jelly beans – eek! Around 4:30 I was hungry for my snack – cheese! Had two slices then wrapped up work and headed back to the gym! I did the following cardio workout:

Walked 5 minutes at 4.0
Ran 10 minutes at 6.3
Walked 4 minutes at 4.0
Ran 10 minutes at 6.3
Ran 1 minute at 7.1
Walked 2.5 minutes at 4.0

The above was 3 miles in 32.5 minutes – woo! Great workout. Do I wish I had done the 21 minutes with no break? Yes. Do I wish I had done even more than 21 minutes of running? Yes. But honestly, I’m just happy I got in a good workout and I’ll try harder next time! After the run me and Stacy did a great ab workout then called it a night! (burned 265 calories). Then I headed home, had bacon and ranch slowcooker chicken and some cookies and called it a night! I ended up at 1,810 calories, 230 carbs, 39 fat grams and 122 protein grams. Here’s what I ate.

Working from home. Do you do it? Have you done it? Could you do it if need be? I work from home one day a week and while I love it and find that i'm productive, I couldn't do it more than that. I love the office interaction, accountability, etc.

I cannot work from home. I don't get anything done and even if I did, I miss the socialization aspect of an office setting.

All of your recipes for this week sound great!! Especially the spicy thai chili linguine!!

There is NO way I could work from home! I'm way too scatter-brained and wouldn't get anything done. I would procrastinate like crazy.

Jimmy works from home and loves it, I don't think I could be productive for work. I do think my house and any chores would be done to avoid working!
It is nice knowing that if something has to be done during the day Jim can run out and do it.
Hope you find that cord, I KNOW it will bug you!

I think I'd have a hard time being productive if I worked from home all the time, but I feel like 1 or 2 days a week would make it easier to relax under pressure!

I would love to work from home 2-3 days a week. Hopefully, that will be my solution when I have little ones someday!

My husband worked from home for the last year and he loved it at first but it is impossible to separate work and home life! When he starts his new job in June I think he will love being out of the house.

Daisy will miss him though :(

I could not work at home - I'd be in the kitchen cooking all day or doing laundry!

My husband has worked from home for years and loves it - I like coming home knowing he's already there!

I do online classes at home which I guess is similar to working from home.. I really like it!

I worked from home for all of 2008. It's not for me. I prefer to be in the office around people. I just feel too isolated and disconnected when I am home every day.
