4th of July Lake Trip

Happy Holiday Weekend! I hope you're all having great ones!! I'm in town, in bed with a sore throat. But that's okay - because i'm off work, i'm with Reuben and I have a wonderful Internet connection + full DVR - woo! How was your weekend?! Here's what we were up to....

Friday I just worked, walked 3 miles and did upper body ST, left work at 2 p.m., met up with Austin, met up with Mary & Scott and then we were lakebound! We got in around 6 central time and had a great night playing with Ruje’s new karaoke machine, grilling chicken and corn, playing games (including one I’d never played – Partini), and catching up with everyone. We all stayed up a bit late but had SO much fun – couldn’t wait for the day in the sun. I ended up at 1,742 calories, 156 carbs, 42 fat grams and 113 protein grams. Here’s what I ate.

Saturday we slept until 9 or so, got up and had one of my new breakfast casseroles! Everyone seemed to like it so I’ll definitely post the recipe/photo this week! Then we headed over to Mark’s parents’ dock next door and visited with them. The boys took off to wakeboard and slalom ski, while we chilled on the deck. Then we had lunch, regrouped and then it was pontoon time! So we went out and had some drinks, anchored and swam, jumped cliffs and chilled – such a fun day! We stayed out for so long – fabulous weather, fun music and good times! We took TONS of pictures. Here’s a few.

Later the guys stayed outside and smoked a chicken and set off fireworks. Us girls stayed in and talked until LATE. I learned so much about them thanks to Mary’s “tell us something we don’t know about you” game. Haha I ended up at 1,963 calories, 165 carbs, 55 fat grams and 104 protein grams. Here’s what I ate.

Sunday I got up feeling great and well rested. Scott made bacon & egg biscuits and we headed next door for our last day docking it. We floated around, did flips off the dock and chilled.

Then we headed back and I put together this new recipe I found in Ruje’s Rachel Ray Cookbook using the leftover chicken from the night before – Quesadilla roll-ups. Yummy! Then it was time to pack and get back to Atlanta – they had a Phish concert to get to! We stopped at the gas station, got TONS of treats, made it back to Atlanta, stopped by my sister’s to visit/see new house stuff, stopped by my mom’s to visit/pick up Reuben, and then headed home to unpack, shower, have a few glasses of wine and toast a great 4th of July weekend! I ended up at 1,978 calories, 188 carbs, 54 fat grams and 88 protein grams. Here’s what I ate.

What was the best thing you ate all weekend? I had lots of yummies, but must say I was MUCHO impressed with the new coconut M&Ms – they taste like Girl Scout cookies Samoa. Dangerous! LOL
