My Birthday, Book Review, 4 Miles, New Recipe

Today is my birthday. I’m officially 28. When did this happen? I swear I have the hardest time getting older! It makes me sad. It makes me worry I missed something or didn’t do something. I don’t know why but every year I get equally anxious – hate that feeling!

Since I’m weird about today, I’ll tell ya about yesterday! It started with heading into work where I finished reading Mary Higgins Clark’s I Heard That Song Before. This was a book about a gardener’s daughter, Kay, who overheard an argument at the Carrington mansion at a young age, just before her father commits suicide and two women end up dead. Now, flash forward many years, she’s falling for Peter Kerrington, who was a major suspect in both women’s deaths. The book is a mystery and a romance, and you never know who Kay should trust as she uncovers lots of suspicious alibis, cover-ups and the truth about her past and her husband. I LOVED it. I thought it was a great mystery. It kept me engaged even as it introduced numerous characters. I never felt confused or behind – thought it was AWESOME. I give it a 5/5 – I would listen to it again in a heartbeat!

So glad to read that book – definitely started the day off right! I got into work and got lots done, then walked 4 miles with Stacy during lunch. It went by SO quick as we caught up on our weekends! Then it was back to work. I had planned to run after work, but still felt a little funky, so I headed straight home and got in bed to rest, pay some bills, watch some Pretty Little Liars and read some Twilight. Hehe that list made me laugh- I’m such a womanchild. For dinner I made a new recipe that I found at the lake – Rachel Ray’s Quesadilla roll ups. Here’s my version of the recipe for FOUR servings:



16 oz. chicken + 1 pack taco seasoning, slow cooked for 3 hours on high and shredded; divided into 4 servings
4 mission burrito size tortillas
2 oz. cabot 75% fat-free cheese, grated, divided into 4 servings
2 oz. fat-free cheddar cheese, grated, divided into 4 servings
½ cup green salsa, divided

Add tortilla over medium heat. Top with cheese spread evenly. Cook until tortilla is slightly browned. Heat up a serving of chicken in the microwave (about 1 minute). Remove tortilla from heat and top with chicken. Roll up and cut into pieces. Serve each with 2 tbsp salsa.

Nutritional Information: 417 calories, 42 carbs, 7 fat grams and 41 protein grams.

Review: GREAT! I love these – super filling and flavorful. Next time I may add a tbsp of fat-free sour cream. For more calories (AKA for Austin) serve with chips and salsa on the side or a ½ cup of black beans. One thing to note – if you them crispy (which we did) make sure the chicken is dry – so pour some of the taco seasoning/sauce out (or just drain it).

After dinner we just washed some Tosh.0 and called it a night! I ended up at 1,582 calories, 169 carbs, 43 fat grams and 108 protein grams. Here’s what I ate.

Q: How do you feel about birthdays? I swear it’s not like I don’t want to get older or that I’m not happy with my life, it’s just a reminder that I have less time for good times!!

Happy Birthday! Summer birthdays are the best, obvi.

I like birthdays -- they feel sort of like New Years Day to me. It's a chance to remember all the fun in my previous year and look forward to all the things I want to do with the next year of my life. Plus, birthday cake makes everything awesome!

Wait until you hit 30 sister! I turned 30 in April and it was the wierdest thing...EVER! I generally have the same worries and thoughts, but all you can do is take things day by day and enjoy it :)

I think the great thing about getting older is that we have learned soooo much are thus are happier each year!! I swear I am happier at 28 than I was at 21 because I finally figured out how to love myself and what things aren't worth stressing about
