Good stuff! We had the Thai Coconut Curry Shrimp for dinner before Austin left. Here's the recipe:

Thai Coconut Curry Shrimp
Adapted from Gina's Weight Watcher Recipes
Makes 4 Servings
1 tsp canola oil
4 scallions, whites and greens separated, chopped
1 tbsp Thai red curry paste
1 tsp garlic, minced
1 lb shrimp, peeled and deveined
1 cup light coconut milk
2 tsp fish sauce
1/4 cup fresh cilantro, chopped
salt to taste
3 cups white rice
Red pepper flakes and salt to taste
In a large nonstick skillet, heat oil on medium-high. Add scallion whites and red curry paste and sauté one minute. Add shrimp and garlic, season with salt and cook about 2-3 minutes. Add coconut milk, fish sauce and mix well. Simmer about 2-3 minutes, until shrimp is cooked through. Remove from heat, mix in scallion greens and cilantro. Serve over rice and enjoy.

Review: Super filling and flavorful. I did have to add a bit of red pepper and salt to mine, I like my meals on the hot side! Austin really liked it too, although he said he wished it were a bit thicker (sauce was a little thin – but again, I liked that). I think this would be great with chicken too, as opposed to fish. We’ll be making this again!

The rest of my evening was pretty much an hour of work (blah), Brothers and Sisters (pretty good) and Desperate Housewives (pretty good - loving that David Austin Green is on there!!).
Today was also pretty hum-drum. Just worked, walked 2.5 miles during lunch plus bicep and back strength training and then more work. After work, I headed over to the gym for a 1/2-mile walk + 3.5-mile straight run at 6.3 mph. Yay! It's getting more and more easy. Then I headed home to sick Austin (he's full-on sick - eek!) and made another new recipe - YUM! More on that later! BTW - my blog life met my real life today! I got an email today from Ragan Communications (a site I subscribe to for work - for those who don't know i'm an associate manager, communications, with a background in PR from undergrad and communications in grad school). Some of it's highlights include PR blunders, i.e. the Marie Claire issue. Here's a link if you're interested in what the industry is saying. I thought it was interesting, and also interesting is that Marie Claire finally responded...
