MIA, Black Crowes, Lazy Sunday, Pitzas

Hi, friends! I'm sorry I've been so MIA! I suck. I will say that my office moved on Friday to a new location so Friday was spent packing/early leave/etc. so today i'm all behind unpacking, getting settled, finding the bathrooms, etc. Anywho, THANK YOU for the ideas to spice up my jambalaya - you guys rock! It's so on next time. :) K... backing up for my weekend!

Saturday I had grand plans. Gym. Shopping with my mom and Sis. Cooking. My stomach had other ideas and I felt awful all day and pretty much stayed in bed. Awesome. I finally scraped myself out of bed and got ready to hit The Tabernacle for the Black Crowes concert! We met Stacy and Shane there around 8, right before show time, and really enjoyed the show. Here's some pics:



They played a lot of our favorites, and some of our not-so-favorites but what you are going to do? It was a LONG show - like started right at 8, had a 10-minute break, played until 11:25 - WOW. But it was great. It would have been better with a chair but again, what are you going to do?! After the concert we hit up 5 Paces to wish Lo a happy birthday but it was INSANELY crowded. Like no going to the bathroom, or getting drinks, or standing in one place without getting pumped 12 times so we had to roll and hit up Stout Irish Pub where we ended our night (and finally got to sit down!). Great night!! And my tummy held out pretty good - nice!

Yesterday was lazy, lazy. I just chilled with Austin and the pups, watched movies and rested. I did a bit of work and a photo shoot with the pups (pics coming soon!) but that's it. Lovely! Sunday in a nutshell:

I also made more Pitzas - I just love these guys and found that the recipe on my blog was sorely out of date. So here is a new, updated recipe and picture for my favorite Pepperoni Pitzas!
Pepperoni Pitza
Makes 1 Serving

1/4 cup low-calorie spaghetti sauce
1 large Trader Joe's pita (about 8" or 220 calories)
1/2 tsp olive oil
1/8 tsp red pepper flakes
1/4 tsp minced garlic, jarred
28 grams fresh mozzarella (1/4 cup)
10 grams fat-free feta cheese (1 1/2 tbsp)
6 turkey pepperonis

Set oven to broil. Spray pan with nonstick cooking spray and set pita on it. Use rubber brush to spread olive oil on pita top evenly. Add sauce and brush to even, then sprinkle with red pepper flakes and garlic. Top with mozzarella and feta, then add pepperonis. Broil for 7-9 minutes, keeping an eye on it to ensure it doesn't crisp (they cook fast).

Nutritional Information: 371 ccalories, 51 carbs, 10 fat grams and 16 protein grams.

Review: This recipe is truly an old standby. We used to make these on the medium-sized pitas but you had to have 1.5 pitas to be full. We've tried more sauce and less sauce, more olive oil and less olive oil. We used to cut the pepperonis into small pieces. Point being, we've found that the recipe above is the best for us (love the addition of garlic!) and that 6 pepperonis is plenty, and didn't want the extra step of making them smaller. If you like your pitza crispy, air on the side of 8 to 10 minutes - even if it looks a little brown on stop - still amazing. We like ours "medium" so we usually remove at 8 minutes.

Glad you're feeling better and that you had a fun time at the concert! I love pita pizzas (and english muffin pizzas). They're such a great/easy go to din din. Cute pic of the puppers relaxing!

Don't feel bad....I'm so behind reading blogs too!! Life has been crazy lately!!
I don't make pizza pitas enough....so easy and delicious! And I'm not a Black Crowes fan. :(

love the pitza's idea! Fast, easy and I love pizza. We just recently got into making deep dish pizza full of veggies in a cast iron skillet. I'll have to try this one! And sunday....I did NOTHING TOO! Loved it.

I've never had a pitza, but this is staring at me. We actually have a few WW pitas in the fridge right now...must remember these for an upcoming meal!!

That looks delicious! Years ago I had a recipe for a meat sauce that I would bake on pita bread for a pizza.I need to get that out and make it again!

I use flat bread for pizza, not a fan of pepperoni so I use turkey sausage or ground beef.

I love pita pizzas, bread pizza or english muffin pizza!They are a tasty and satisfying meal and also ready in a snap!
