New Pizzaish Recipe, War Eagle, Loving my Staycation

You guys I am LOVING my staycation. I feel so super relaxed and every day I wake up like yesssss it's not Sunday/time to go back to work! I really have lived in my sweats and I can't be happier. I will say i've watched some really crappy movies. Wow. How they got made i'll never know. Anywho, I hope you're all enjoying your Thanksgiving holidays as much as me and Austin!! So yesterday was a great day! I got up fairly early, lounged around, then hit the grocery store and whipped up some new recipes for gametime! Here's some pics - i'll post the recipes this week!


Katie & Chris and Austin's brothers and cousin Kevin came by to watch the game with us - GREAT game. I mean, Alabama scored 21 points in the first quarter. We scored none. But Auburn came back to beat them by one point, 28-27. Nail biter doesn't even begin to cut it - it was insane! Fun to watch though, and I enjoyed the new recipes, including:
  • Chili (new mix)
  • Black & White Bean Dip
  • Fiesta Sliders
After the game I got in the shower and got ready, played some pool at the house then headed to Five Seasons with Katie, Chris, Huff and Dobbs. We had a really great time, then went to Chris's to hang out. We ended up cabbing it home to be on the safe side. GREAT night - War Eagle!!! And I have a recipe to share! I made this on Thanksgiving for Friday's lunch. AWESOME.

Upside Down Pizza
Recipe adapted from an allrecipes.com recipe
Makes 6 Servings

Ingredients
1 pound 96/4 ground beef
½ cup onion, chopped
2 tsp minced garlic
2 cups jarred low-calorie spaghetti sauce
125 grams (a little over 1 cup) fresh mozzarella cheese, grated (divided)
½ cup grated Parmesan cheese, grated (divided)
1 (8 ounce) light crescent rolls
¼ tsp Italian seasoning
¼ tsp red pepper flakes
Salt to taste
1 egg white
Dried basil for garnish

Preheat oven to 350 degrees. Heat oil in a large pan. Add garlic and stir constantly for 30 seconds. Add onions and continue stirring for 2-3 minutes until translucent. Add beef, Italian seasoning and red pepper flakes, and cook, stirring every few minutes, until beef is no longer pink, 6 – 8 minutes. Once done, add spaghetti sauce and stir. Add salt if desired. In a 9x13 inch baking dish, spread a layer of sauce. Top with half of the mozzarella and half of the parmesan cheese. Add remainder of sauce then remainder of cheeses. Top with crescent rolls, pinching seams together. Brush egg white on top. Bake for 25 minutes, or until the top is brown. Sprinkle with dried basil as garnish.

Full pan cut and ready to eat - 6 servings

Nutritional Information: 367 calories, 24 carbs, 18 fat grams and 29 protein grams.

Review: We loved it! I was a little worried about crescent on top and truth be told I probably could have closed the seams better, but I was ready to stick it in the oven and try it! The sauce mix with the layered cheeses was really good - almost tasted like a parmesany spaghetti. And the breaded top added a lot to it - the crescents really baked up when on top, whereas i'm sure if they were on bottom it would have been much less doughy. We really liked it and wouldn't change it a bit - i'm glad I added the red pepper flakes and seasonings - the extra heat made it even more appealing!

Q: Ever had an upside down pizza?! I hadn't - it was easy and fun to make though. My friend Katie made one with biscuits on top!

Q: Are you traveling or having a staycation? I'm not traveling for a couple of weeks - I'm really loving being home!

Congrats on the winnnn!The Food looks fab- perfect for a football party. And I love the idea of an upside down pizza. I kind of want to make one with loads of veggies. We're definitely on staycation too and it is WONDERFUL!

i'm loving being at home. i can't believe it's only Saturday. Can I come over to your house to eat? I'm sure my husband will want to come too! You ALWAYS having something yummy cooking.

I've never made an upside down pizza; looks & sounds fun! No traveling for us for a while. I've been sick for the last week or so and haven't been able to enjoy my days off. But I'm really looking forward to some more time off soon!

Hey, this may make your pizza easier, they now make seamless crescent dough! it's just like a pizza crust but its crescent, and its awesome!

Oh that looks SO good- I love crescent dough, what a fun way to use it!! I've never had upside down pizza, but clearly it's worth trying :)

I love the idea of upside-down pizza. I think my man would just adore it.

I live up on The Frozen Tundra (aka MN) and they were showing the Iron Bowl at the bar - what an exciting game! Congrats on the win!
