My December 2010 Cardio Plan (sigh!), New Burrito Recipe, Book Club

Thanks you guys! I really like that bake - it heats up well, too - I've been bringing it to work all week! Wow. Our commutes are all over the place from work-from-homers zero commutes to 2+ hours round trip. I definitely see Biz's point about it getting to a point when you're in the car to much to really have a life! Drive + work + gym + work + gym + drive + sleep = not enough fun in there! I normally don't feel that way with my 1-hour-round-trip commute, but this week i've felt overwhelmed and exhausted!! On another, somewhat similar note, I worry I've walked myself into a corner. Basically, my goal is 1,000 miles this year. I slacked a few months. Didn't do anything over T-giving break. Now, here I am with 131.5 miles to do in December. Not too bad - BUT I'm in Chicago for 3 days next week... and I'm in Colorado for 6 days later this month. What's a girl to do? PLAN PLAN PLAN. Here's what I've come up with...

I've confirmed that the Chicago hotel HAS a great gym!! It looks like the one in Colorado does too but i'd prefer to not work out on top of skiing, and really want to enjoy this trip with Austin and his family. (not that working out is unenjoyable - you know what I mean!) What do you think? Can I do it?! So far I did the first 4 miles yesterday per the plan.
Yes, 4 down and only 127.5 to go in the next 30 days - WOO! Awesomeness, so other than figuring out how my cardio schedule and walking 4 miles, yesterday just involved another LONG commute in, work and BOOK CLUB! Yay! It was at my sister Devon's house and the book to discuss was Sharp Objects. I personally LOVED this book - SO much. It seems that was the general consensus - nice! I really enjoyed seeing Dev, Shana, Karly, Danielle and Stacy - so fun to have a girl's night - and Devon made amazing food! Chicken Tetrazzini, cream cheese brownies, the best salad and garlic bread - WOW!

After book club I just headed home to the family so happy that Thursday is a work from home day. Yesssss. And, as has become customary, I have a recipe to share! (I know, shock)

Rotel Slowcooker Chicken Burritos
Recipe adapted from Fabulessly Frugal
Makes 6 Servings
Nutritional Information: 462 calories, 58 carbs, 10 fat grams and 32 protein grams.
Review: Yum! The guacamole added so much mixed with those beans. It was almost like a bean burrito then no – there’s some spicy chicken! I liked the sour cream and that little bit of cheese went a long way. This was a great burrito/wrap that we’ll definitely be having again. Although, next time I’ll double the chicken and use the other half in salads or in a taco or enchilada bake!


Q: What are your goals for December? Aside from walking/running131.5 miles, i'm still focused on doing more videos, doing more abs, and doing more mealplans!

Q: What's your favorite burrito mix-in? I think mine is beans - they're just so filling! I really liked how these mixed with the avocado. nom nom nom.

Good luck with the big walking goal! If I was there, I'd go for a few with you :) That meal looks tasty- like Chipotle at home!!

This December I want to drink more water, learn to use my camera better, try some new recipes and experiment with new exercise classes. I'm so excited to have more time to do things after the 14!!

My goal for Dec is to stay on track with my workouts and weight. Cold weather and holidays make it hard but planning helps.

I'm a big bean fan as well! Cheese is my fav though.

I'm jealous of your organizational skills. Also, that you get to go skiing in Colorado.

I'm definitely an avocado fan. And my December goal is to stop drinking diet soda.

My December goal is to get back into a regular workout/movement routine (at least 30 minutes of exercise/movement every day plus weights at least three times per week). I find I'm moving (not just working out) much less when it's colder. Plus, I've been sick for over a week now, and I feel sluggish... I also want to make sure I don't get caught up in the "craziness" of the season, but take time and enjoy what's important...

Love your goals! I know you'll reach them! :-)

I love book club!! Some of my friends and I just started one and it is the best way to assure some mid week girl time. We are reading The Bluest Eye for our first book and I am excited because I never read as much Toni Morrison in college as I would like to. I think our next book will be a bit lighter.

Also, you have inspired me to start walking during lunch at work at least a couple of days a week! Its hard because I usually have to work through my lunch "Break" but I am going to make time!

You are SO inspiring I hope you know that! I was thinking that sounded like a lot of miles but then you made a little schedule and made it look doable.

Let's see, goals for December are really to drop some of this weight that's crept up! I don't track food but I just want to be more mindful. I'm going to LA for a few days for work mid-December and would like for my clothes to fit effortlessly, haha. And then a trip to Vegas in January. Trips when I'm going to see people always seem to be good motivation--but no plan sadly. :(

My goal is to get my calves in working order for my half marathon in January. Not looking promising so far...

Man do those burritos look good! I actually love a sweet potato/refried bean combo. So delicious.
