Top it with your bacon and cheese (I use 1/2 slice of Kraft singles and 2 slices of turkey bacon). Microwave it for 20 seconds to melt the cheese and soften the toasted muffin.

That's how it's done! I don't know if I'll ever scramble eggs in a pan again! LOL Moving on! I got sleep last night. Austin has been out of town all week (again) for work. But he got back last night unexpectedly so I slept SO good. I don't sleep well when he's gone. Boo! Anywho, I woke up with more rest than I've had since Sunday. I just got to work, used my lunch break to walk 4 miles, worked more and enjoyed my puppers' company. Then I made THREE new recipes - yum - can't wait to post! Now i'm off to have a couple of beers with Austin - YAY - before getting back to work - BOO.
Q: What's your 'kitchen trick' - a way that makes things easier for you? I still can't get over not having to make 'egg packs' to go to work (i.e. scramble a big pan of eggs, weigh out servings on foil, then microwave again the next day - awesome).
Q: The month is almost over. If you had monthly goals, how are they going? I've been tracking mine on the sidebar and think it's going pretty well! I've definitely had a busy month, at work and socially, so i'm happy I was able to accomplish as much as I did!
And as per normal lately, time to post another recipe!

Beautiful egg sandwich :) I just had eggs for dinner- so yummy! Glad your man is home from travel! I was on travel and just got back today. I thought I wasn't going to make it with the snow, but I did!! That soup looks awesome. I love spicy, Mexican inspired soups. Yayy for almost Friday

Spray the tupperware with cooking spray. It makes the eggs come out much easier. I normally actually use egg beaters which require a bit more cooking time.
*Pretty genius* I must say. I would have never thought of this. (I would have been afraid of bringing an "open" egg in a container to work. Do you worry about it getting...hot?)
Hmm, kitchen tip? Whenever I use tomato paste, I always put the rest in a ziploc bag and then squeeze it out so it's in a pretty flat sheet. Then I freeze it and break off chunks as needed until it's all gone!

The egg idea is genius! Have you ever tried ziplock omlets? You mix two eggs and whatever fillings - green peppers, sausage, pepperoni, cheese etc - seal and boil for 13 mins. You can make multiple at one time AND the clean up is EASY! Very fun for a group too!

That is an egg sandwich that would make Dunkin Donuts look bad. So tasty :) Mexican inspired soups are my fave because they freeze so well.
