Day 117: Another Chill Day & Another Recipe!


Yesterday me and Austin woke up early, then napped, and just bummed around all day (again!). I just couldn’t bring myself to go to the gym (again!) and so I hung around and pre-made meals and watched Heroes back-to-back and just chilled in my PJs. I did manage to help Austin cook a yummy lunch (shrimp scampi) and I stumbled across a new recipe I had to try, which led to a trip to Trader Joe’s and Kroger! Ah, grocery shopping. So what I had to try was a recipe for Red Curry Chicken. Me and Austin used to LOVE hitting up some curry whether at Annie’s Thai Castle or even a Tin Drum kind of place. YUM. But, clearly, I found out coconut milk AKA curry was not the way to go for someone trying to lose weight so we just didn’t eat it. Well, not cool, if I can find “healthy” fries I can dang sure figure this out, right?! Enter a recipe adapted from Follow My Weigh and two Trader Joe’s products: light coconut milk and simmer curry sauce. Here’s what I used:

· 80g tomato chopped
· 50g bell pepper chopped
· 8 oz. boneless, skinless chicken breasts
· 1/4 cup Trader Joe’s curry simmer sauce
· 1/4 cup Trader Joe’s light coconut milk

Directions: Defrost Chicken in microwave. While it’s defrosting, spray a medium-hot pan with fat-free PAM. Add the tomato and bell pepper to the pan and saute. Add a few spoonfuls of water to the pan. Add in the curry simmer sauce and coconut milk. Turn the heat to medium-low, add as much salt and crushed red pepper as you prefer (I used a lot!) and simmer. Chop up chicken; put 1.5 cups rice in microwave and start cooking. Drop in chicken and simmer until rice is done (7 minutes). The sauce should be concentrate. Pour the chicken and sauce over a plate of rice. Enjoy! Per Spark People, the recipe, which makes two servings, had 418 calories, 62 carbs and 4 fat grams – not bad for Thai curry and white rice – yay!

All in all, I had 1,375 calories, 167 carbs and 17 fat grams. Freakishly low on fat – random! Odd that I skipped breakfast… but had three 4-ounces glasses of wine at night… maybe that’s where the fat went! Anyway, here’s what I ate.
