Day 99: Back to Work & Yes, ANOTHER new Recipe

I was feeling better today. Woke up weighing 119 and ready to get back to work and tackle my day. But my computer was acting up and it took, I’m not kidding, from 8 a.m. until 12:30 p.m. to get it to work. OMG – torture – wanting to work, being at work, being behind at work… and being able to do NOTHING! Sigh. I finally got it back and got to work but I didn’t get to take a lunch/walk. But I DID get to leave at 5 and go to the gym for a 4-mile walk. I was supposed to do legs/abs, too, but wanted to get home so tomorrow is going to be a BIG day for cardio and strength training.

When I got home from the gym me and Austin made a new Chicken Parmesan recipe from, you guessed it, Kitchen Parade – my new favorite place on earth! It was AMAZING – I kid you not – we loved it. Here’s a plate of our final product… and here’s how we made it for two: Preheat oven to 450 degrees. Defrost 8 ounces of chicken in the microwave (we measured 4 tenders at 2 ounces each). Combine 1 tbsp Dijon mustard, 1 tsp white wine vinegar and 1/8 tsp of salt and pepper. Whisk into a sauce. Grind half an English muffin. Add ¼ cup reduced fat parmesan cheese, 1/8 tsp pepper, 1 tbsp fat-free parkay spray butter and pulse 2-3 times until blended. Fully coat both sides of each piece of chicken in the sauce, then the breading mixture and then lay on a nonstick baking sheet (or foil). Cook for 15 – 17 minutes. Serve over 3 oz. angel hair noodles and 1/2 cup (or less) or Muir Glen pasta sauce. YUM. The meal had 560 calories, 6 fat grams and 85 carbs. So it’s a little high but worth every calorie… and carb. If you wanted to make it less caloric/carby, save 100 or 50 calories by having 2 or 2.5 oz. of noodles instead, and save 15 by using a light English Muffin instead of regular. I hope you try it and love it – I just think Kitchen Parade is AMAZING – seriously – I’m like 4 for 4 on their recipes! By the way, you should know that i'm actually a very picky eater and don't LOVE everything. I get very nervous before each recipe's first bite, worried it didn't come out right. :)

At the end of the day, I had 1,528 calories, 210 carbs and 38 fat grams – not bad!! I also walked 4 miles (1 hour) which burned 216 calories – taking me to 1,312 calories – good day! (especially since I gave myself so many yummy treats!) Here’s what I ate. K – back to Hunger Games – only 50 pages yet and I’m DYING to know what happens!

You are doing sooo AWESOME! So proud that you are only a few lbs away from the goal - wahoooo!!! And i finally got caught up on all of your yummy new recipes....I'll def havve to try them! Can't wait to hopefully see you this weekend!
