So yesterday. Sigh. You know how every once you in a while things are just coming to a head and you’re excited but kind of anxious? And then it doesn’t go your way and really, semi blows up in your face? Then you find yourself crying because you’re so blindsided and angry and just BLAH. Sorry – not a good explanation – I just don’t talk “work” on here. But let’s just say I was having a good day, walked 3.5 miles, had a bad afternoon and cried the whole way home until about 7 p.m. Then I sucked it up, cooked dinner, showered and had a few drinkies. Then our bestie was down from NY (who just broke off his engagement… :( ) so he came over with a favorite couple of mine from back home and her brother (who I love and haven’t seen in foreva!) and his GF.
The 7 of us had a few drinks here and before I knew it, I was at an ale house at 3 a.m. playing pool with the guy I’m still thinking of hiring to be my personal trainer. Gotta love those “chill, relaxing weekends” I’m SO BAD at making happen. Even when we got home we stayed up playing pool until 4:30 a.m. What is WRONG with us? I ended up at 2,399 calories, 255 carbs, 45 fat grams and 101 protein grams. Here’s what I ate. Food was GREAT – right around 1,700 but alcohol gets you. And the bar didn’t have SF Redbull so I had half a regular. Eek! At least I did burn 332 calories during my 3.5 mile walk!
Despite only having 5 hours of sleep, I popped up at 9 a.m. I got it together, made a grocery list and took it to the gym!! I walked 2 miles then did legs and abs…

You guys – GREAT workout. It took exactly 1 hour and 3 minutes, and I burned 379 calories. Woo! The leg workout was killer and I’m so happy I made myself do it and poured sweat – woo! I left the gym and headed straight for Kroger ready to make some new recipes. I raced home and Austin unpacked while I put together a new recipe: Beef and Bean Enchiladas from one of my FAVORITE food bloggers - For the Love of Cooking. I changed it a little for 2 peeps and for our preferences – here goes!
½ tsp olive oil
2 tbsp onion, diced
½ Anaheim chile, diced
½ jalapeno, diced
8 oz. lean ground beef (I used 96/4)
½ tsp paprika
½ tsp onion powder
½ tsp cumin
½ tsp garlic powder
½ tsp oregano
¼ tsp chili powder
¼ tsp crushed red pepper
Preheat oven to 350 degrees. Heat oil in a medium skillet over medium heat. Once hot add the diced onion, chile and jalapeno. Sauté for 3 minutes; add the ground beef and all the seasonings. Cook until beef is done making sure to break it up into crumbles. I added a little water during cooking.
Other ingredients:
6 Corn tortillas
½ can of Bush’s mild beans
½ cup enchilada sauce
30 grams fat-free cheese
2 tbsp Sour cream
Green onions, diced
Place tortillas in wet paper towels and microwave for 60 seconds or until soft and pliable. Coat a square baking dish with cooking spray then pour ¼ cup enchilada sauce on the bottom of the pan coating evenly. Place a spoonful of undrained beans on the tortilla followed by a large spoonful of the beef mixture. Roll and place seam side down on the baking dish Continue until baking dish is full. Pour the remaining enchilada sauce over each enchilada then top with shredded cheddar cheese. Cover the baking dish with tin foil and bake for 20 minutes. Remove the tin foil and continue to bake for 2 additional minutes. Remove from oven and let cool for 2-3 minutes before serving. Top the enchiladas with sour cream and green onions. Enjoy. Nutritional Information for 3 enchiladas/1 serving: 477 calories, 21 carbs, 8 fat grams and 32 protein grams.
Fabulous! Even with the fat free cheese and stuff it tasted restaurant style which is AMAZING. So flavorful and fabulous!! And…. This is my first time cooking with ground beef! It was so easy and Austin was so excited to have “red meat” back in the hizzy. After lunch I finalized my goals (posting tomorrow!) then I passed out. And took a 3-hour nap, getting up at 6:30. OMG. Now I’m going to go make another new recipe, get in the shower, and go meet some besties at a bar in Buckhead. Going to make it a two-part goal: A) don’t drink myself into oblivion and B) Be ASLEEP by 3 a.m. Hmmmm. I’ll post my ‘final stats’ tomorrow – but I’m hoping it works out.
