Monday: JD d-light; chicken fried rice; Mexican Pizza for Austin/out for me
Tuesday: brunch pizza squares; pasta fagioli; slow cooker chicken burritos
Wednesday: brunch pizza squares; pasta fagioli; chicken enchilada casserole
Thursday: brunch pizza squares; slow cooker chicken burritos; tomato & pesto pizza
Friday: baked sausage omelet; cheesy chicken spaghetti; chicken enchilada casserole
Saturday: baked sausage omelet; pasta in creamy sundried tomato sauce; tomato & pesto pizza
Sunday: baked sausage omelet; Easter Out; pasta in creamy sundried tomato sauce
Then I was hungry for “late lunch.” I noticed we still had 1 serving of beef and ½ can of chili beans (from tacos) in the fridge, about ¾ can of tomato sauce from the 3-pepper pizza, and already-grated cheese in preparation for a breakfast casserole. I also had a bag of dough ready to go. So I through together this Mexican Pizza! Here's the recipe for FOUR servings!

16 oz. Trader Joe’s Plain Pizza Dough
1 tsp canola oil
1 8 oz. can tomato sauce (use ¾ of can)
1 tsp fajita seasoning
4 oz. ground beef (sautéed with jalapeno in taco seasoning)
6 slices tomato
½ can spicy chili beans (in sauce)
60 grams Kraft natural swiss/parmesan Reduced Fat blend
4 tbsp fat-free sour cream
1 cup romaine lettuce
Preheat oven to 450. Spray pizza pan very lightly with cooking spray. Spread on pan with hands. Spread dough on pan. Sprinkle with oil and spread with brush. Combine fajita seasoning and tomato sauce in can. Stir, and add to pizza, spreading evenly with brush. Add beef, tomatoes, beans and cheese. Cook for 12 – 15 minutes, until cheese melts and crust is brown. Top with lettuce and sour cream. Nutritional Information: 403 calories, 58 carbs, 10 fat grams and 18 protein grams.

We LOVED it. I’m so glad I put this together today and plan to make it a regular – super filling and flavorful! Around 5 or so I got in a funk – don’t know why?! Just grumpy gus with no motivation to work out or do anything! Grrr. Finally at 7 I was like I’m going to the gym no matter what! So I went over there and walked 4 miles (ran a little bit – but total of 4 miles). I burned 211 calories. Then I picked up Austin and we went to the grocery store in the rain – so many great sales (buy 1 get 1 free spaghetti sauces, sausage, etc.). Then it was MORE Mexican pizza – I was craving it! LOL I ended up at 1,556 calories, 222 carbs, 38 fat grams and 72 protein grams – here’s what I ate.

Do you ever eat the same meal for lunch and dinner? I do this a lot... sometimes I just didn't get enough of it at lunch!
