New Recipe, Meal Plan, 4 Miles

Thanks, friends! I'm tres happy with the new kitch! I commented to you all in the comments section of the last post. I love doing that!! How was your Sunday?? Mine was lovely! It began by sleeping in until 11 a.m. Glorious! I LOVE catching up on sleep and woke up feeling SO well rested and great! I folded laundry, cooked chicken fried rice for “brunch” and hung out with Austin and Reuben! Then I headed back downstairs, made my mealplan and made my grocery list! Here's this week's meal plan:

Monday: JD d-light; chicken fried rice; Mexican Pizza for Austin/out for me
Tuesday: brunch pizza squares; pasta fagioli; slow cooker chicken burritos
Wednesday: brunch pizza squares; pasta fagioli; chicken enchilada casserole
Thursday: brunch pizza squares; slow cooker chicken burritos; tomato & pesto pizza
Friday: baked sausage omelet; cheesy chicken spaghetti; chicken enchilada casserole
Saturday: baked sausage omelet; pasta in creamy sundried tomato sauce; tomato & pesto pizza
Sunday: baked sausage omelet; Easter Out; pasta in creamy sundried tomato sauce

Then I was hungry for “late lunch.” I noticed we still had 1 serving of beef and ½ can of chili beans (from tacos) in the fridge, about ¾ can of tomato sauce from the 3-pepper pizza, and already-grated cheese in preparation for a breakfast casserole. I also had a bag of dough ready to go. So I through together this Mexican Pizza! Here's the recipe for FOUR servings!

16 oz. Trader Joe’s Plain Pizza Dough
1 tsp canola oil
1 8 oz. can tomato sauce (use ¾ of can)
1 tsp fajita seasoning
4 oz. ground beef (sautéed with jalapeno in taco seasoning)
6 slices tomato
½ can spicy chili beans (in sauce)
60 grams Kraft natural swiss/parmesan Reduced Fat blend
4 tbsp fat-free sour cream
1 cup romaine lettuce

Preheat oven to 450. Spray pizza pan very lightly with cooking spray. Spread on pan with hands. Spread dough on pan. Sprinkle with oil and spread with brush. Combine fajita seasoning and tomato sauce in can. Stir, and add to pizza, spreading evenly with brush. Add beef, tomatoes, beans and cheese. Cook for 12 – 15 minutes, until cheese melts and crust is brown. Top with lettuce and sour cream. Nutritional Information: 403 calories, 58 carbs, 10 fat grams and 18 protein grams.

Another shot of my serving - I love this little concoction!

We LOVED it. I’m so glad I put this together today and plan to make it a regular – super filling and flavorful! Around 5 or so I got in a funk – don’t know why?! Just grumpy gus with no motivation to work out or do anything! Grrr. Finally at 7 I was like I’m going to the gym no matter what! So I went over there and walked 4 miles (ran a little bit – but total of 4 miles). I burned 211 calories. Then I picked up Austin and we went to the grocery store in the rain – so many great sales (buy 1 get 1 free spaghetti sauces, sausage, etc.). Then it was MORE Mexican pizza – I was craving it! LOL I ended up at 1,556 calories, 222 carbs, 38 fat grams and 72 protein grams – here’s what I ate.

Do you ever eat the same meal for lunch and dinner? I do this a lot... sometimes I just didn't get enough of it at lunch!

Ahh I love sleeping in/catching up on sleep- I took a personal day today and slept in until 9:15!

I sometimes eat the same thing for lunch & dinner... if it's so nice, then I eat it twice. :)

Once again, your meals always look great. One of these days when I have more time I'll be making some of your recipes!

And I often eat the same thing multiple times a day---if its easy and if its yum, then It's in my belly often :)

Oh I'm jealous of your sleeping in. I wanted to do that this weekend but didn't get the chance.

OMG that pizza looks to die for. I'd eat it for every meal.

I love how organized you are with your meal planning!! I definitely do the same thing for lunch/dinner...I have a paranoia that leftovers will go bad if I don't eat them immediately! Hope you're having a great Monday :)

I think I'm gonna meal plan for the rest of the week - sooooo unlike me!! haha!! I feel like I need a plan this week... we'll see if this sticks! ;)

That pizza looks quite delicious!!

That looks so yummy! I eat the same thing all the time. It's tough because Hubs haes leftovers, and is suspicious of any food cooked longer than a day ago. I eat something cooked a week and a half ago without qualms!

The pizza looks and sounds great! I love salad on pizza! And yes, when I like something I could eat it for days (my family not so much)...

Girl. I am really bad or good- depending on your view- about eating the same thing over and over. And yes, I'll eat the same thing for lunch and dinner sometimes. Today for example but that's more of a "Just got back from another business trip, need to grocery shop, eating what I have in the fridge/pantry" LOL ;-)

OMG that pizza looks amazing. It doesn't look like it could possibly be good for you...but it is :)

I am such a creature of habit...once I find meals that work I tend to make them over and over. Like tonight...we had meatloaf for like the 3rd Monday in a row.

I definitely am known to eat the same meal for lunch and dinner. I'm all about that some days.

You know what I love about your pizzas? That you put tomato slices on them!

Laura Dishes: I know it! It's pretty awesome. hehe I love that saying!

Lisa: Thanks!! I hope so - and I hope you like. :)

Genesis: Me too!! I hadn't either - but am a huge fan now!

Kacy: oh boo - maybe this weekend! Thanks! haha me too!

Gabriela: Thanks! I'm a huge fan of meal planning! Oh I don't - i'm all about waiting 2-3 days. :)

Homecookedem: haha! I hope it goes well! Thanks, girl - I was really happy with how it turned out!

Samma: LOL!! I'm kinda that way too... i'll freeze things too - i'm not too afraid so long as it was cooked right the FIRST time!

Angie: thanks, chica - me too!!

Andrea: me too - fresh cold toppings make me happy!!

Kelly: Oh I don't think it's bad at all! Austin TOTALLY disagrees - he's all for variety which was one of the reasons I took up cooking in the first place!! I can't be trusted without a meal plan. hehe

Therese: I know it! Those are my favorites - they look calorie-laden but really only 400 - woo! yes - that's me! Austin will duplicate for breakfasts okay but for dinners he's like I could really use something different!

Anne Marie: Thanks, girl!

Mica: I hear ya! Really I eat the same thing a lot in a week since I only make like 7 recipes/week - BUT, I try to not eat the same thing in one day! Thanks - I LOVE fresh tomatoes and think they look beautiful in large slices on a pizza!
