6 Miles, Upper Body ST, New Salmon Recipe

Monday. Blah! I was so tired and had zero motivation but tons to do - not a good combo! I got through the day, got lots done, and got in a 4-mile walk at lunch, and a 2-mile walk + Upper Body ST after work. Not too shabby! After work I headed home, worked with Austin to make 6 egg/bacon muffins, 8 "mexican beef" servings, 4 chicken & mushroom pesto servings, and then ate pesto and hung out with Austin & Reuben - great night at the end of the day, right?! I ended up at 1,763 calories, 202 carbs, 52 fat grams and 102 protein grams. Here's what I ate.

Today was a bit better but SO busy. I mean, really - how many meetings can you squeeze into one day?! I had a working lunch with a major spread of food - I helped myself to LOTS of greens and grilled chicken, and only 1 tbsp of dressing (knowing it was likely full fat ranch!). It was a great meal! Then I had a cookie. Oh well! Can't make ALL the right choices, right?! I ended up working late so guess what? No gym. I know. I could have gone but it was 6 by then and I was hungry! haha I headed home and made a new Cooking Light recipe - Wasabi Salmon.


I had it with a 1/2 cup of rice (sauteed in 1 tsp soy sauce, 1/4 tsp minced garlic, 1/4 tsp minced ginger) and 1/2 cup of edamame. Yummy and filling - 517 calories, 45 carbs, 16 fat grams and 39 protein grams! Here's the recipe for ONE piece of fish:

½ tbsp low-sodium soy sauce
½ tsp wasabi powder
½ tsp bottled minced ginger
½ tsp sesame oil
1 4-oz. skinless salmon fillets (about 1 inch thick)
Cooking spray

Combine soy sauce, wasabi, ginger and sesame oil in a zip-top plastic bag; add fish. Seal and marinate at room temperature 5 minutes, turning bag occasionally to coat. While fish marinates, heat a large nonstick skillet coated with cooking spray over medium-high heat. Add fish and marinade; cook 3 minutes. Turn fish over. Reduce heat to medium; cook 8 minutes or until fish is done, turning 1-2 more times. Serve with rice and edamame.

I loved it! Next time I want to just toss it on a bed of romaine with some homemade yogurt sauce or something - FABULOUS. And have more edamame - those little guys are the bomb. After dinner I just chilled out - since I didn't go to the gym I did a leg workout at home - pretty good stuff! I watched my girly TV since Reubs doesn't mind (especially since he spent the evening with a new toy from Austin!), and then I blogged and called it a night with a 10 p.m. vitatop - love! I ended up at 1,489 calories, 125 carbs, 55 fat grams and 96 protein grams. Here's what I ate.

Do you like edamame? I love it - it freaks me out how filling it is! But I LOVE the look of that plate above with that green - I need to have more plates with greens!!

Ever cooked with wasabi powder? This was my first time - worked great!

I can't say I've ever cooked with wasabi powder, but that recipe sounds delicious--I think I'll have to try it!

That salmon looks amazing. I have not worked with wasabi powder but my hubby would love that dish.

I do like edamame, we have it for snacks a lot.

I love both wasabi and edamame, so good! I have wasabi powder but only really use it for sushi, I need to get more creative.

Yep, edemame and I are best friends- ironically I only get it when I go out to sushi when I have 2 bags in my freezer.

Yum- I have never tried wasabi powder- just the paste. I love anything with wasabi and I am excited to try your salmon recipe.

That salmon looks delicious!! And I love edamame!! But I cannot eat it without salt. Andrew and I are always the ones to order it when we go out with a group. Lots of people turn their noses up to it and then when we get them to try it their usually like wow this really is good! Ummm, yeah, duh!! haha! :) That meal looks so delicious and healthy!!

I love, love, love edamame- I always get it when I go out to sushi, and end up ruining my dinner with it!! And I've never used wasabi powder, but I love the stuff they give you with sushi :)

About your coconut flour question- I got mine at WF. It's expensive, but very dense, so a little goes a long way!

I LOVE edamame. Not so much wasabi though. It reminds me too much of horseradish, which I despise.

Love edamame - and have found it already shelled and frozen at the grocery store - you just blanch them in boiling water and then add them to salads, etc. so good!

I tend to like wasabi paste better than powder - I've never gotten the right texture with powder, but maybe I am doing it wrong?

That recipe sounds amazing for two reasons: I LOVE salmon, and I love wasabi! Funny story though- the first time I had wasabi I didn't know how it was going to be (we were getting sushi) and I took a big spoonful.. not a pretty sight!
