Wednesday was another great weekday! I got up at 5:30, and hit the gym for a 6 a.m. spin class. I was a bit late, so I only ended up spinning for 37 minutes spinning, then I hopped on the treadmill for 1/4 mile at 6.3 mph and a 1/4 mile at 7 mph. When all was said and done, HRM said: 46 minutes, 363 calories, 2 fat-burning minutes and 44 fitness minutes; Average HR 150; max HR 186. Great little workout! I'm loving mixing the spinning and running and my feet (well, my right foot/problem foot) don't seem to mind - BONUS!
I took this pic of her last night with my new BB - she was sitting on my belly staring at me - about a foot from my face. LOL
After my workout I just worked, took my lunch break to run errands (return something to Container Store; grab gift at Macy's; grab items at Target), then worked more. After work my commute was HORRIBLE, then I got home and the pups were loose! They had gotten through the gate and met me at the front door. Oy - first time for this! Thankfully, they were safe and hadn't made messes. And Remy update: little girl can 'shake' now just like her big brother! We've been working with her and she picked it up quick, probably because Reuben does it so well and she's very motivated by food!
Thursday was just working from home and a work wedding shower! Here is a pic of me and (most of) my team at the shower!
After the shower I just headed home and watched crap TV. I also had some of these AMAZING enchiladas. Seriously - i'm in love.
Summer Vegetable Enchiladas
Adapted from a Dinners for a Year and Beyond Recipe
Makes 6 Servings
Nutritional Information (for 2 enchiladas): 396 calories, 67 carbs, 7 fat grams and 15 protein grams.
Another amazing meatless recipe where I didn't miss the meat one bit! This one is good too if you eat with a bigger guy - you can have 3 2-enchilada servings and he can have 2 3-enchilada servings! :) Here's the recipe on Healthified Kitchen. I mean it - make it this weekend - LOVE!
So yes, what's with all of the cooking and crap TV? Austin was out of town again. SIGH. He's back from Philadelphia today though - WOO!
Q: Ever made meatless enchiladas? Any tips or favorite ingredients to share?
Q: What are you up to this weekend? We have a wedding! Fun! And we hope to visit with Austin's fam and see his youngest bro off to prom - love it!

You can earn $20 for each 20 minute survey!
Guess what? This is exactly what big companies are paying for. They need to know what their average customer needs and wants. So big companies pay $1,000,000's of dollars per month to the average person. In return, the average person, like myself, participates in surveys and gives them their opinion.
