Caprese Breakfast Cups, Weekly Workouts!

How is it Thursday?! Closing out another long week. In a nutshell:

  • Monday: a.m. 2-mile run + 1/2-mile walk + biceps & shoulders; lunchtime 3-mile walk & work, work, work!
  • Tuesday: a.m. Turbo Fire; work, work, work & home to the fam!
  • Wednesday: a.m. 1-hour Tabata class; work; lunch with Stacy & Monica at Sweet Tomatoes; more work; 2-hour phone date with bestie Emily (who lives in Virginia); beer and Castle with Austin!
  • Today: long day WFH; no workouts, but I hope to get back to it tomorrow!
Still working on my new step-by-step meal plan, part of which included these little yummies!

Review: LOVED. Great little breakfast bites and I loved that you got 3. The caprese taste really came through - definitely use fresh basil! And they reheated wonderfully the next day at work. I'll definitely have these again, would even consider dipping in a side of spaghetti sauce! The calorie count is a bit low, so definitely consider a side of fruit or a healthy bar to have before lunchtime. These were TOO easy - next time I'm going to make 2 batches and try freezing half - I have a feeling they'll reheat from frozen very well! Check out the recipe on Healthified Kitchen!

Q: What are your weekend plans? We have none - i'm SO pumped!
