SOYJOY Daycation Giveaway Winner, Book Review

It's almost Friday and I'm SO READY for another relaxing weekend!! Quick recap: Wednesday was pretty standard - early morning workout - 1-mile run at 6.3, 1/4-mile walk at 4 mph, and 30-day shred. Then it was work, a farewell lunch at Brio for a co-worker, then more work. I had originally planned to spin after work but alas my stomach/cramps disagreed so I went home to my PJs, bed and pain relief meds - awesome! I DID get to have a nice dinner (the new Spicy Beef Lo Mein!) and a movie with Austin but that was that! I also remembered that I never shared my book review.


Dean Koontz's The Husband (audio) was about a nice, normal guy who owns a lawn service. One day he gets a call that a ransom call - his wife has been abducted and he's been framed for her murder if doesn't come up with way more money than he has. It begins quickly, kept me engaged with twists and turns and surprises, then slowed down considerably, and then the ending was a little underwhelming. So for me, it was a good book to listen to in the car, but it wasn't the best. I'd give it a 2.5/5.

My New Favorite Meatless Breakfast Recipe!

Morning! Hope you all had great weekends! This may have been the most relaxing weekend I've ever had. No where I had to be, nothing I had to do - just chilling at home with my family doing, well, whatever I felt like! Sunday was a total rest day, although I did do Jillian Michaels 30-day shred. Gah she makes me sweat. Other than that, I just cooked more! And I posted a recipe for Mexican Lasagna. Here is another new recipe I made - I had it for breakfast yesterday and made it this morning, too. I like it because you can cook it all at once for 4 people, or just make them one at a time!
Mexican Breakfast Burritos with Avocado 
Makes 4 Servings
Nutritional Information: 414 calories, 56 carbs, 15 fat grams and 20 protein grams.

 My favorite kind of recipe - fresh ingredients, good fats, colorful and filling. I really enjoyed this recipe and think it's a pretty awesome start to the day. It made a big, filled burrito, but the calories weren't too high.

YUM, I REALLY like this breakfast - definitely my favorite meatless breakfast. It's funny, last year if I'd seen this recipe I would have been like nope. Where's the meat? Why's it so green? Avocado.... I don't know. Now I'm really noticing myself gravitating towards more and more 'rainbow' recipes, and am even looking at meatless ones, too, which before wouldn't have been considered. Loving all of the cooking and the new tastes it's bringing me! A few months ago I posted my food firsts - things I had never done before blogging. The list gets longer all the time!

Q: Any new food firsts for you? I cooked with  sirloin this weekend (first time!). I also made Lo Mein for the first time - not that scary! And lastly, I made a breakfast tostado - first time and it was SO good!

Q: What's your favorite breakfast burrito combo? This seriously wins - I like it better than my standard sausage/egg/cheese or sausage/potato/egg - it's just so fresh and light, but filling!

Movie Reviews, Shredding, Weight Update

Apparently the excitement of having posted my first step-by-step meal plan overwhelmed me as I haven't posted since Wednesday which is mucho out of character! I've also been wasting time in front of the TV saving money by taking advantage of our Netflix account. However, the movies have not been very good. Maybe i've been missing something, but here's what I've been watching.
Meh. The Switch wasn't bad but Jason Bateman's character just really wasn't likeable and the whole film was very predictable. I think for me the whole premise was just silly (i.e. the party that made the situation happen to begin with). It was just odd. I wanted to like it - I like both leads and thought it could be cute, but I'd have to give it a 2/5 - watchable but nothing to chat about.
Now this was much better. No, Rachel's character and her love interest didn't have a lot of chemistry. And yes, it seemed a bit long sometimes and I had a few of those 'why was this included' moments. But overall, I enjoyed seeing her act as a neurotic over-achiever, and seeing her succeed in her career in TV. It was a cute, feel-good film that I could maybe watch again. I'd give it a 3/5.

This was so bad it was good. Really. I thought Gwenyth did an awesome job as an alcoholic country singer. Yes, I never would have thought it but was kind of blown away. And even when she made mistakes I wanted her to succeed! Tim did a great job as her somewhat-mean husband, and Leighton and Garret did a great job, too. It was so strange to see a Gossip Girl as a country girl, but it worked. I will say that the actual script/movie were way too long and the ending was just bizarre. It was a really good made-for-TV movie, but not a good movie if that makes sense. I gave it a 2.5/5.

Outside of watching movies, Thursday was spent working, working through lunch and working some more. No workouts - rest day - just chilling with the pups. I DID finish a book, Killer Heels, i'll post a review tomorrow! Friday was a two-a-days day. I woke up early, ran 2.5 miles and walked 1/2 mile, worked, went back to the gym at lunch and walked 2 miles and did Jillian Michael's Shred Phase 1 (for the second time). I got off work early! So I headed home, hung out with the fam, then met Stacy & Shane for a few drinks (fun!) before heading to Jason & Crystal's for poker night. Always a good time!! Great Friday - loved hanging out with everyone and getting to visit with Crystal and Stacy!! And a quick weight update: My goal was to get to 120 by the end of June. The lowest I got was 122.5, and i'm maintaining there. SO, now my goal for July will be to get to 119. TOTALLY realistic goal. I'm counting on shred, spinning, running and tracking to get me there. I didn't track in June. Oy. But it's July 2 - i'm tracking this month dang it! Moving on! Today is a hodge podge - SO many things I want to do, and it's going well so far - at least on the cooking front. :)

Shred & Scribd; 40 Meals in 3.5 Hours

Happy Wednesday! I hope yours is going well! Mine was okay - a bit frantic but good. I had to be at work at 7 to prep for a project (so no a.m. workout), and then was running around a good bit of the day - blah. I didn't get to take a lunch break. boo. No lunch workout. But after work I did do Jillian Michael's 30-day shred Phase 1. I had never done these before! For those who have been living under a rock with me don't know, it's basically 30 days, 3 phases. First 10 days you do phase 1, then phase 2, then so on. I liked it! Lots of mixes (cardio, then ST, then abs) to where you would do jumping jacks, jumping rope, then lunges combined with biceps, then abs. Then lots of repeats and different exercises. Only 25 minutes but fast, non-stop and good stuff! Even though I didn't make it to the gym, I'm glad I did something AND took advantage of my u-verse! Outside of working out, I FINALLY got around to finalizing my first step-by-step meal plan! You may remember this picture... 40 meals in 3.5 hours!
Then my lazy bum had tweaks to make to the meal plan (i.e. which ones froze best, etc.) and I just sat on it, forgot, and procrastinated. But it's up now!
